1 1/4 teaspoons coarse salt
1/4 cup chopped fresh cilantro (optional)

  • If using corn tortillas, toast individually over a gas flame on low or in a pan for about 40 seconds per side. Stack on top of each other and wrap in foil or a clean kitchen towel. This will steam the toasted tortillas for pliability.

I had a small little crab cake left from Recipe#250972 By Recipe Reader and wanted to do something different with it besides just re-heating it. So the cake, and a few other little ingredients became a very enjoyable breakfast. Unless you use the same recipe as I did for the Crab Cake, you may not get the same taste as I did. But everyone likes to put their own spin on recipes, so that's o.k. :) If desired, serve with your favorite bread or English muffin toasted. Posted to Food.com (a.k.a. 2 ounces crab cakes, crumbled
4 tablespoons margarine, divided
2 large eggs, well beaten
1/4 teaspoon ground black pepper
4 tablespoons monterey jack cheese, divided (optional)

Steps:

  • In a small skillet, melt 2 Tablespoons of margarine over medium heat.
  • Add crumbled crab cake into melted margarine and warm through.
  • Then add remaining margarine and melt,add beaten eggs at this time.
  • Sprinkle with pepper and 2 Tablespoons of cheese, if using.
  • Scramble eggs until desired doneness is reached.
  • Place eggs on a plate and top with the remaining cheese.

1 lb small red potato, cubed (about 6 or 7)
6 eggs or 1 1/2 cups egg substitute
1/3 cup skim milk
1/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons butter or 2 tablespoons canola oil
4 medium green onions, sliced (approx. 1/4 cup)
5 slices bacon, crisply cooked and crumbled

Steps:

  • Heat 1 inch of water to boiling in a 2-quart sauce pan. Add potatoes. Cover bring back to boil; reduce heat to medium low. Keep covered and cook for additional 6 to 8 minutes or until potatoes are tender; drain.
  • Beat eggs, milk, salt, and pepper until well mixed; set aside.
  • Heat oil in 10-inch skillet over medium high heat. Cook potatoes in oil 3 to 5 minutes, turning potatoes occasionally, until lightly browned. Stir in green onions. Cook 1 minute, stirring constantly.
  • Pour egg mixture over potatoes. As egg mixture begins to set at bottom and side of skillet, gently lift cooked potions with a spatula so that the uncooked portion can flow to bottom; avoid constant stirring. Cook 3 to 4 minutes or until eggs are cooked to your liking.
  • Sprinkle with bacon.

3/4 cup heavy cream
1 teaspoon salt

1 cup red bell pepper, chopped
1 cup mushroom, sliced
1 (4 ounce) can green chilies, diced
6 slices bacon, cooked & crumbled (optional)
3/4 cup cheddar cheese, shredded
3/4 cup monterey jack cheese, shredded

Steps:

  • Combine eggs, cream and salt in medium bowl.
  • Melt butter in a large skillet; cook onion, bell pepper and mushrooms until tender.
  • Add the chiles, bacon (if using), and egg mixture. Cook, stirring occasionally until eggs begin to set. Sprinkle cheddar cheese and Monterey Jack cheese over eggs. Cover, and continue to cook until eggs are set and fully cooked.
