2 cups whole milk
5 whole large eggs
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
Salt and freshly ground black pepper
12 whole roasted, peeled and seeded green chiles (can use canned whole green chiles)
1 1/2 cups grated Monterey Jack
Warm corn tortillas, for serving

Steps:

  • Preheat the oven to 325 degrees F.
  • Mix together the milk, eggs, paprika, cayenne and sprinkle with salt and pepper. Cut the chiles in half and add a single layer them on the bottom of a 9-by-13-inch baking dish.
  • Top the chiles with half the cheese. Repeat with another layer of chiles and another layer of cheese. Pour the egg mixture over the top.
  • Place the baking dish into a larger baking dish or on a rimmed baking sheet. Pour in 1/2-inch of water and bake until completely set, 35 to 45 minutes.
  • Cut into squares and serve with warm corn tortillas!

5 cups water
1 lb eggplant, peeled and chopped
1 medium onion, chopped
2 eggs, beaten
2 1/2 tablespoons chopped canned green chilies
hot sauce, to taste
3/4 cup shredded extra-sharp cheddar cheese
3/4 cup shredded monterey jack cheese
1/3 cup cracker crumb
1 tablespoon butter or 1 tablespoon margarine, melted
commercial picante sauce or salsa

Steps:

  • Add water to a large pot; bring to a boil.
  • Add in eggplant and onion; cook for 10 minutes or until vegetables are tender; drain well; set aside.
  • In a bowl, mix together eggs, green chiles, hot sauce, cheddar cheese, and Monterey Jack cheese.
  • Add in eggplant mixture; beat using an electric mixer on medium speed until mixture is smooth.
  • Spoon mixture into a 1-quart casserole that has been sprayed with non-stick cooking spray.
  • Mix together the cracker crumbs and melted butter; sprinkle over the casserole.

3 Japanese eggplants, skin on and cut into 1/2-inch dice
1/4 cup olive oil
Salt and freshly ground black pepper
1 tablespoons finely chopped garlic
2 tablespoons finely chopped fresh oregano leaves
1 tablespoon finely chopped fresh flat-leaf parsley leaves
1 cup grated Manchego cheese
1 cup grated Monterey Jack
3 roasted red peppers, peeled, seeded and chopped
3 to 4 roasted garlic cloves
3 to 4 tablespoons creme fraiche
1 tablespoon red wine vinegar
1 tablespoons honey
1 tablespoon chopped chipotle in adobo
3 cups balsamic vinegar
1 tablespoon honey
1 bottle dark beer (1 1/2 cups)
3 large eggs
2 tablespoons all-purpose flour
Salt and freshly ground black pepper
4 to 6 medium-sized, poblano peppers, oven roasted, seeded and carefully peeled
1 1/2 cups all-purpose flour
1 1/2 cups yellow cornmeal
4 cups peanut oil
Freshly chopped parsley leaves, for garnish

Steps:

  • Preheat the oven to 425 degrees F.
  • Toss the eggplant with the olive oil and season with salt and pepper and place onto a baking sheet. Place the baking sheet into the oven and roast for 10 minutes.
  • Remove the baking sheet from the oven and toss with the garlic and oregano and place back into the oven for another 10 minutes, until the eggplant is lightly golden brown and soft. Remove from the oven, add the parsley and gently toss to combine. Let cool slightly.
  • Place the eggplant into a bowl and toss with the cheeses. Set aside.
  • Combine the ingredients in a blender and blend until smooth. Set aside.
  • Bring the vinegar to a boil in a small nonreactive saucepan and cook until thickened and reduced to about 3/4 cup. Stir in the honey and set aside.
  • Whisk all ingredients together in a large bowl. Set aside.
  • Divide the eggplant filling among the peppers, compressing it into the shape of the pepper (the roasted pepper is very delicate and may begin to tear, but it will be fine).
  • Place the flour onto a plate and season with salt and pepper. Dredge the pepper completely in the flour and tap off any excess. Dip the peppers into the beer batter and allow excess to drain off. Place the cornmeal on a plate and season with salt and pepper and dredge the pepper in the cornmeal.
  • In a large frying pan, heat the oil to 370 degrees F.
  • Fry the peppers in batches, turning until lightly brown, about 4 minutes. Drain on paper towels. Spoon some of the sauce in the middle of the plate. Place a relleno on top of the sauce and drizzle the relleno with some of the balsamic reduction. Garnish with parsley.

8 medium poblano peppers
4 large eggs
½ cup all-purpose flour
⅓ cup milk
½ teaspoon baking powder
½ teaspoon salt
1 (12 ounce) package queso fresco
1 (8 ounce) package shredded Cheddar cheese

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Roast peppers on the top rack of the preheated oven until the skins are charred, about 5 minutes per side. Remove from the oven and allow to cool enough to handle, about 10 minutes. Set the oven to 350 degrees F (175 degrees C).
  • While peppers are cooling, whisk eggs, flour, milk, baking powder, and salt together in a medium bowl until smooth. Slice the queso fresco into eight even rectangles, just shorter than the length of the peppers.
  • Carefully peel off the waxy skin of the cooled peppers. Gently cut a slit down the length of the peppers and use a spoon to remove the seeds and membranes.

This recipe comes from my 76-year-old Japanese mother, who learned it from a Filipino lady she used to work with back in the early 80s. If using wonton wrappers, you can serve these as appetizers. 2 (12 ounce) packages egg roll wrappers
1 (27 ounce) can whole green chiles - seeded, drained well, and patted dry
1 pound Monterey Jack cheese, cut into 3x1/2-inch thick strips
vegetable oil for frying

  • Lay a wrapper on a work surface diagonally so it resembles a diamond. Place a slice of green chile horizontally across the wrapper, 1 inch above the bottom point. Place a strip of Monterey Jack cheese on top of the chile.
  • Fill a small bowl with water. Dip an index finger into the water and moisten the edges of the wrapper. Roll the wrapper up and over the chile and cheese, starting from the point closest to you. 4 oz Monterey Jack cheese, cut into 3x1/2x1/2-inch strips
1 jar (2 oz) diced pimientos, drained
4 eggs, separated
1 1/2 cups milk
1/2 cup Gold Medal™ all-purpose flour
1/4 teaspoon salt
Cilantro sprigs, if desired
2 cups Old El Paso™ Thick 'n Chunky salsa

Steps:

  • Heat oven to 350°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray. Stuff chiles with cheese strips; arrange in baking dish. Sprinkle with pimientos.
  • In medium bowl, beat egg yolks and milk with wire whisk until well blended. Stir in flour and salt until smooth.
