EGGSQUISITE BREAKFAST CASSEROLE

- In a large skillet, cook bacon until crisp. Remove bacon to paper towel to drain; discard all but 1/4 cup drippings. In the same skillet, add the beef, mushrooms, flour and pepper to the drippings; cook until thoroughly combined. Gradually add milk; cook and stir until thickened. Stir in bacon; set aside. , In a large bowl, whisk eggs, evaporated milk and salt. In another large skillet, heat butter until hot. Add egg mixture; cook and stir over medium heat until eggs are completely set., Place half of the eggs in a greased 13x9-in. baking dish; pour half the sauce over the eggs. Repeat layers. Cover and bake at 350° for 55-65 minutes or until a knife inserted in the center comes out clean. Let stand 5 minutes before serving.

Easy egg and cheese breakfast casserole, fluffy, and a little bit crispy around the edges. Mix it up with your favorite omelet ingredients. Great for a lazy weekend morning.

- Preheat the oven to 350 degrees F (175 degrees. Coat an 8-inch square baking pan with cooking spray.
- Combine eggs, Cheddar cheese, cottage cheese, flour, butter, baking powder, and salt in a large bowl. Stir to mix well. Pour into the prepared baking dish.
- Bake in the preheated oven until golden brown and a knife inserted into the center comes out clean, about 25 minutes. Let cool for 5 minutes. Top with hot sauce before serving.

BREAKFAST CASSEROLE
This recipe is from Southern Living Magazine but tweaked a bit by me. It's great for an early-morning breakfast or brunch for a crowd, because you can do most of the work ahead of time and just throw it in the oven the morning you want to serve it.

Steps:
- Cook sausage in a skillet over medium heat, stirring until it crumbles and is no longer pink; drain well.
- Place bread cubes in a lightly greased 9" X 13" baking pan.
- Sprinkle bread evenly with cheese, and top with sausage (or ham).
- Whisk together eggs, milk, salt, pepper, dry mustard and Worcestershire sauce and pour evenly over sausage mixture.
- Cover and chill casserole for 8 hours (may be frozen at this point, and thawed before cooking).
- Let stand at room temperature 30 minutes.
- Bake at 350 degrees for 45-50 minutes, or until set.
- Let stand 5 minutes before serving.
