2 cups semisweet chocolate chips
1 can (12 ounces) evaporated milk
1/2 teaspoon salt
1 package (12 ounces) vanilla wafers, crushed
1/2 cup butter, melted
2 quarts vanilla ice cream or flavor of your choice, softened

Steps:

  • In a saucepan over medium heat, melt chocolate chips with milk and salt; cook and stir until thickened, about 25 minutes. Remove from the heat; set aside. Combine wafer crumbs and butter; set aside 1 cup. Press remaining crumbs into a greased 13-in. x 9-in. pan. Chill for 10-15 minutes. Pour chocolate over crumbs. Cover and freeze for 10-15 minutes or until firm. Spread the ice cream over chocolate. Sprinkle with reserved crumbs. Freeze at least 2 hours before serving.

1 glass milk

vegetable oil, for frying
4 small flour tortillas
1/4 cup sugar
1/2 tablespoon ground cinnamon
1 pint cinnamon ice cream
1 (8 ounce) can chocolate syrup
4 maraschino cherries, with stems

Steps:

  • In a heavy skillet, pour oil to the depth of 1/2-inch.
  • Heat oil over medium heat.
  • When oil is hot, fry tortillas, one at a time, for about 30-40 seconds on each side. (Press down tortilla with a fork, if it starts to puff up while frying).
  • Drain fried tortillas on paper towels.
  • In a small bowl, combine the sugar and cinnamon.
  • Sprinkle each fried tortilla with the cinnamon sugar mixture while they are still warm.
  • Set fried tortillas aside to cool.
  • When you are ready to serve, place a generous scoop of cinnamon ice cream on top of each tortilla.
  • Drizzle each tortilla and ice cream with chocolate syrup.
  • Place one cherry on top of each scoop of ice cream.
  • Serve immediately.
  • ~NOTE~ The tortillas can be fried up ahead of time and stored in an air tight container.
  • ~NOTE~ If you can't find cinnamon ice cream at your store, you can either make it homemade or use vanilla instead. My family likes BlueBell's "bunuelos" flavored ice cream for these sundaes.

VOLCANO ICE CREAM SUNDAE

Also, it's been suggested that you could possibly make individual volcanoes with paper cups filled with ice cream and following the technique below. (All ingredients are estimates. Sorry, this is just one of those as much as you think kind of recipes)

5 quarts pail ice cream (vanilla or your choice)
12 ounces magic shell chocolate fudge topping
11 1/2 ounces hot fudge (not too thick)
4 sugar cubes
1 teaspoon lemon extract (orange extract works too)
4 maraschino cherries

Steps:

  • Run a knife around the edge to get the ice cream out in one piece. You may have to dip the container in hot water.
  • Place ice cream upside down on a platter.
  • Cut sharp edges from the top and sides to slope the ice cream in the shape of a mountain.
  • Pour shell over the top. Let harden and then add hot fudge (this will run off the mountain and give the lava flow effect to around the bottom of the volcano).
  • In a little bowl, take 3 or 4 sugar cubes and pour lemon extract over the cubes.
  • Open 3 or 4 cherries and stick one of those sugar cubes in each one.
  • Put the sugar cube/cherry in the center on the top of chocolate covered "volcano".
  • Light sugar cubes with a match to set fire.
  • Voila!

Vacationing in San Francisco, CA, I took a walking tour called "Emperor Norton's Fantastic San Francisco Time Machine". The tour guide was in character for the entire tour as one of San Francisco's beloved citizens of the late 1800's named Emperor Norton the First. While standing in front of one the city's ice cream parlors; he described a ice cream sundae served there that was named for him but had been discontinued. He gladly gave us the recipe and I hope that you enjoy it as much as I do. I apologize for the picture, but I am sure you get the idea.

1/2 banana, sliced
1/4 cup ice cream cherries
2 scoops vanilla ice cream
1/4 cup fudge sauce
1/4 cup whipped cream
1/4 cup chopped walnuts
1/2 banana, sliced
2 walnut halves

Steps:

  • Slice or dice 1/2 of a banana. Place in bottom of large goblet or sundae dish.
  • Slice or dice 2 of the red ice cream cherries. Place on top of bananas.
  • Place 1 tablespoon chopped walnuts on top of cherries.
  • Top with small amount of whipped cream and fudge sauce.
  • Put one scoop of vanilla ice cream on top.
  • Repeat steps 1 thru 4 and then add second scoop of ice cream

  • You can make this sundae as large or small as you like. I sliced and diced my bananas.
