8 cups curly endive lettuce, cut into bit-size pieces rinsed and spun dry (instead of cutting, endive can be hand torn)

  • TO MAKE THE DRESSING: Chop the shallots and add to the vinegar with the salt. Let sit for 5 minutes. Whisk in the olive oil. Add black pepper to taste.

Tips:

  • Choose the Right Endives: Select fresh, crisp endives with tightly packed leaves. Belgian endives are commonly used, but you can also try frisee or radicchio for a slightly different flavor and texture.
  • Prepare the Endives Properly: Remove any wilted or damaged outer leaves from the endives. Cut them in half lengthwise and remove the core. Rinse the endives thoroughly and pat them dry with a paper towel.
  • Use a Variety of Citrus: While tangerines are the traditional choice, feel free to experiment with other citrus fruits like oranges, grapefruits, or blood oranges. The combination of sweet and tangy flavors adds a delightful contrast to the bitter endives.
  • Add Some Crunch: Toasted almonds or walnuts add a nice crunchy texture to the salad. You can also include croutons or crispy bacon bits for an extra savory touch.
  • Don't Overdress the Salad: A simple vinaigrette dressing is all you need to enhance the flavors of the endives and citrus. Use a light hand with the dressing to avoid overpowering the salad.

Conclusion:

Endive and tangerine salad is a refreshing and flavorful dish that's perfect for any occasion. With its vibrant colors, contrasting textures, and delightful combination of sweet, tangy, and slightly bitter flavors, this salad is sure to impress. So next time you're looking for a healthy and delicious salad recipe, give endive and tangerine salad a try - you won't be disappointed!
