Yield Serves 6

Number Of Ingredients 9

1/2 cup olive oil
1/4 cup walnut oil
1/4 cup Sherry wine vinegar
1 large shallot, minced
5 heads Belgian endive, halved lengthwise, cut into matchstick-size strips
4 cups lightly packed arugula (about 6 large bunches)
2 medium-size Red Delicious apples, cored, quartered, thinly sliced
1 cup coarsely chopped walnuts
1 cup crumbled Gorgonzola cheese (about 4 1/2 ounces)

  • Combine endive, arugula, apples, walnuts and Gorgonzola in large bowl. Add dressing and toss to coat. Divide among 6 plates and serve.

Tips:

  • Choose the right endive: For salads, use Belgian endive, also known as chicory. It has tightly packed leaves that hold the dressing well.
  • Prepare the endive: Cut off the root end and remove any wilted or damaged leaves. Rinse the endive under cold water and pat it dry.
  • Make a flavorful dressing: A simple vinaigrette is a classic choice for endive salad. You can also use a creamy dressing, such as Caesar or blue cheese dressing.
  • Add complementary ingredients: Endive pairs well with a variety of ingredients, such as bacon, walnuts, blue cheese, and apples. Get creative and experiment with different combinations to find your favorite salad.
  • Serve the salad chilled: Endive salad is best served chilled. You can make it ahead of time and store it in the refrigerator for up to 24 hours.

Conclusion:

Endive salad is a delicious and healthy way to enjoy this unique vegetable. With its slightly bitter flavor and crispy texture, endive is a great addition to salads, sandwiches, and wraps. So next time you're looking for a light and refreshing salad, give endive a try. You won't be disappointed!
