Yield Makes 4 servings

Number Of Ingredients 14

1 cup plain yogurt
1 cup chopped fresh cilantro
1 cup chopped onion
5 large garlic cloves, chopped
1 tablespoon fresh lemon juice
1/2 teaspoon cayenne pepper
2 15-ounce cans garbanzo beans (chickpeas), drained
3 tablespoons plus 1/2 cup all purpose flour
2 teaspoons ground cumin
1 large egg
Olive oil
4 warm pita breads, top third cut off
Sliced tomatoes
Crisp lettuce leaves

Steps:

  • Whisk yogurt, 1/2 cup cilantro, 1/4 cup onion, 1 garlic clove, lemon juice and 1/4 teaspoon cayenne in medium bowl to blend; season with salt and pepper. Refrigerate until ready to serve.
  • Blend garbanzo beans, 3 tablespoons flour, cumin, remaining 1/2 cup cilantro, 4 garlic cloves and 1/4 teaspoon cayenne in processor until almost smooth. Add egg and remaining 3/4 cup onion and blend, using on/off turns, until onion is finely chopped. Transfer mixture to bowl; sprinkle with salt and pepper. Shape mixture into four 1/2-inch-thick patties. Turn patties in remaining 1/2 cup flour to coat on both sides.
  • Pour enough oil into heavy large skillet to coat bottom; heat over medium-high heat. Add patties and cook until crisp and golden, about 8 minutes per side. Open pita breads; slide 1 patty, sliced tomato and lettuce into each. Spoon in some yogurt mixture.

Tips:

  • Use dried chickpeas. Dried chickpeas are more flavorful and have a better texture than canned chickpeas. If you don't have time to soak the chickpeas overnight, you can quick-soak them by boiling them for 1 minute, then removing them from the heat and letting them sit for 1 hour.
  • Season the chickpeas well. The chickpeas are the base of the falafel, so it's important to season them well. Use a combination of spices, such as cumin, coriander, and paprika. You can also add some garlic and onion powder for extra flavor.
  • Don't overmix the falafel mixture. Overmixing the falafel mixture will make the falafel tough. Mix the ingredients just until they are combined.
  • Use a food processor to grind the falafel mixture. A food processor will give you a finer grind, which will result in smoother falafel.
  • Form the falafel into balls or patties. You can use a spoon or your hands to form the falafel into balls or patties. If you're making balls, make sure they are about 1 inch in diameter. If you're making patties, make sure they are about 1/2 inch thick.
  • Fry the falafel in hot oil. The falafel should be fried in hot oil until they are golden brown and crispy. This will take about 3-4 minutes per side.
  • Serve the falafel with your favorite toppings. Falafel can be served with a variety of toppings, such as tahini sauce, hummus, yogurt sauce, or baba ganoush. You can also add some chopped vegetables, such as tomatoes, cucumbers, or onions.

Conclusion:

Falafel is a delicious and versatile Middle Eastern dish that can be enjoyed as an appetizer, main course, or snack. It is a great source of plant-based protein and fiber, and it can be made with a variety of different ingredients. With a little planning and effort, you can easily make falafel at home. So next time you're looking for a healthy and satisfying meal, give falafel a try!
