BRANDIED PECAN PIE

Brandied Pecan Pie image

This pie puts an adult spin on the traditional holiday favorite dessert with the addition of a few teaspoons of brandy.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Pie & Tarts Recipes

Time 1h30m

Number Of Ingredients 13

1 1/4 cups unbleached all-purpose flour, spooned and leveled, plus more for rolling
1 teaspoon sugar
1/4 teaspoon fine salt
1/2 cup (1 stick) cold unsalted butter, cut into small pieces
3 to 5 tablespoons ice water
3 large eggs, lightly beaten
3/4 cup packed dark brown sugar
3/4 cup dark corn syrup
3 tablespoons unsalted butter, melted
1 teaspoon pure vanilla extract
4 teaspoons brandy (optional)
1/4 teaspoon fine salt
2 cups pecans, toasted

Steps:

  • Crust: In a food processor, pulse flour, sugar, and salt until combined. Add butter and pulse until mixture resembles coarse meal, with a few pea-size pieces of butter remaining. Sprinkle with 3 tablespoons ice water. Pulse until dough is crumbly but holds together when squeezed (if necessary, add up to 2 tablespoons ice water, 1 tablespoon at a time); do not overmix. Form dough into a disk, wrap tightly in plastic, and refrigerate until firm, 1 hour.
  • Preheat oven to 375 degrees. On a floured surface, roll out dough to a 12-inch round. Place in a 9-inch pie plate, fold overhang under, and crimp edges. Prick dough all over with a fork. Place a sheet of parchment paper over dough and fill with pie weights or dried beans. Bake until edge is light golden, about 15 minutes; remove parchment and weights.
  • Filling: Meanwhile, in a large bowl, stir together eggs, brown sugar, corn syrup, butter, vanilla, brand (if using), and salt. Fold in pecans. Pour filling into pie shell and bake until set but still slightly wobbly in center, 45 to 50 minutes. Let cool on a wire rack, 2 hours, before serving.

PECAN PIE WITH MRS. KOSTYRA

Pecan Pie with Mrs. Kostyra image

As common as it is today, pecan pie is a relatively recent addition to the American table. No one knows exactly when it was invented, but since the 1940s -- when it was first popularized in "Joy of Cooking" and "The Fannie Farmer Cookbook" -- myriad pecan-pie recipes have emerged, including this sweet, rich version, brought to us by Martha's mother, Mrs. Kostyra.

Yield Makes one 9-inch pie

Number Of Ingredients 9

All-purpose flour, for dusting
1/2 recipe Pate Brisee for Plum Crumb Pie, or frozen store-bought pastry shell
2 1/2 cups pecan halves
4 large eggs
1/2 cup sugar
1 cup dark corn syrup
1/2 cup light corn syrup
1 teaspoon pure vanilla extract
Whipped cream, for serving

Steps:

  • Preheat oven to 350 degrees. If using homemade pate brisee, lightly dust a clean work surface with flour, and roll dough into a 12-inch circle. Fit circle into a 9-inch pie plate being careful not to stretch dough too thin; create edges of choice. Transfer to freezer until firm, about 15 minutes.
  • Coarsely chop 1 1/4 cups pecans; set aside. In a medium bowl, combine eggs and sugar. Whisk to combine. Add corn syrups and vanilla. Whisk until well combined. Add chopped pecans, and stir. Pour into prepared crust.
  • Arrange remaining 1 1/4 cups pecan halves decoratively on top of pie. Bake until crust is golden, filling is firm, and a cake tester inserted in center of pie comes out clean; 50 to 55 minutes. Cool completely before slicing. Serve with whipped cream.

FANNIE LOU'S DERBY PIE

Fannie Lou's Derby Pie image

The Kentucky Derby is a two-minute horse race, but its cultural impacts are long-lasting, including a rich culinary tradition of mint juleps, hot browns and Derby pie. Only Kern's Kitchen Inc. can make a true "Derby-Pie" - the creators of the dessert trademarked the term before partnering with the Kentucky Derby Festival - but while the naming practices are sticky, the concept is universal: a chocolate-chip and walnut-laden batter baked in a pie crust. This version is adapted from author ZZ Packer, who shared her great-aunt's recipe. Many versions exist - some spike the batter with bourbon; others swap in varying nuts or crown the pie with whipped cream - but Fannie Lou's is easy to assemble, and makes a lasting impression.

Time 1h

Yield 6 to 8 servings

Number Of Ingredients 8

1 unbaked 9-inch pie crust (see recipe)
4 tablespoons butter, melted
2 large eggs
1 teaspoon vanilla extract
1 cup dark brown sugar
1/2 cup flour
3/4 cup chopped walnuts
3/4 cup semisweet-chocolate chips

Steps:

  • Heat the oven to 350 degrees. Transfer the crust to a pie plate and prick the bottom with a fork. Cover lightly with a sheet of foil, pressing it gently into the crust and making sure the edges are covered. Place weights (metal pie weights or dried beans) on the foil to weigh down the bottom and hold up the sides of the crust. Bake for 10 minutes, then remove foil. Continue baking until the crust is firm and has lost its sheen but is not browned, about 5 more minutes. Set aside.
  • In a medium bowl, whisk the butter, eggs and vanilla extract. Add the brown sugar and flour and stir until thoroughly blended. Using a rubber spatula, fold in the walnuts and chocolate chips.
  • Pour the batter into the crust. Bake until puffed and golden brown, about 30 minutes. Remove from the heat and place on a rack to cool. Serve warm.

Tips:

  • Use high-quality pecans. This will make a big difference in the flavor of your pie. Look for pecans that are plump and have a rich, brown color.
  • Toast the pecans before using them. This will enhance their flavor and make them more fragrant. To toast the pecans, spread them in a single layer on a baking sheet and bake them at 350 degrees Fahrenheit for 5-7 minutes, or until they are golden brown.
  • Use a combination of light and dark brown sugar. This will give your pie a more complex flavor. If you don't have dark brown sugar, you can make your own by adding a tablespoon of molasses to each cup of light brown sugar.
  • Don't overmix the filling. Overmixing will make the filling tough. Stir the filling just until the ingredients are combined.
  • Bake the pie until the filling is set. The filling should be firm to the touch and should not jiggle when you shake the pie pan. This will usually take about 45-50 minutes.
  • Let the pie cool completely before serving. This will allow the filling to firm up and the flavors to meld together.

Conclusion:

With its rich, buttery filling and crunchy pecan topping, Fannie's Pecan Pie is a classic Southern dessert that is sure to please everyone at your table. This pie is perfect for any occasion, from a casual family gathering to a special holiday dinner. So next time you're looking for a delicious and easy-to-make dessert, give Fannie's Pecan Pie a try.
