FAVA BEANS are large, shiny green beans, often called BROAD BEANS. (NOTE:According to my Fannie Farmer Cookbook, they are in the market in April, May...

Time 1h30m

Number Of Ingredients 11

2 lb dry brown favas - soak over night
1 large onion, cut in half
2 clove garlic chopped
water, to cover fava beans
4-5 clove garlic, chopped
1 large onion, chopped
2-3 Tbsp red crushed pepper (liquid type in jar)
1/2 c dry red wine
1/2-1 c fresh parsley, chopped
1 Tbsp paprika or to taste
1-2 c reserved water from cooking beans

Steps:

  • 1. Nick each bean with a knife. Put first four ingredients in a pot with a lid. Bring to boil, and simmer covered until tender for about 1 hour. When tender, drain reserving 1-2 cups of the cooking liquid.
  • 2. In a pan, saute chopped onions and garlic until onion are tender. Add remaing ingredients along with the cooked favas. Continue cooking for another 30-45 minutes.

Tips:

  • Soaking the Favas: Soaking the favas overnight or for at least 12 hours before cooking helps to soften them and reduce their cooking time.
  • Using Fresh Favas: Fresh favas have a sweeter and more tender flavor compared to dried favas. If you can find fresh favas, use them for the best results.
  • Adding Flavor: To enhance the flavor of the favas, add herbs and spices such as garlic, onion, bay leaves, and paprika to the cooking liquid.
  • Cooking Time: The cooking time for favas can vary depending on the type of favas and their age. Start checking the favas for doneness after about 30 minutes of cooking and continue cooking until they are tender but still hold their shape.
  • Serving Suggestions: Favas can be served as a side dish, appetizer, or main course. They can be enjoyed on their own, mashed, or added to salads, soups, and stews.

Conclusion:

Favas, also known as broad beans, are a versatile and delicious legume that can be enjoyed in a variety of dishes. With their nutty flavor and creamy texture, favas are a great addition to both traditional and modern cuisine. Whether you're using fresh or dried favas, be sure to soak them before cooking to reduce their cooking time and enhance their flavor. Experiment with different herbs, spices, and cooking methods to find your favorite way to enjoy this nutritious and satisfying legume.
