FESTIVE CHERRYETTES

Festive Cherryettes image

This is my dad's favorite Christmas cookie. It is on the order of a shortbred cookie. I absolutely hate nuts but you don't really taste them in this cookie. I put the nuts in my blend and ground them fine.

RED COOKING WINE

Red Cooking Wine image

I know this isn't actually a "recipe", but I love to cook with wine, but I absolutely hate to waste good wine, and absolutely hate to use bad wine for cooking. This method enables me to save that wine for future recipes and to add those "not quite a glass" leftovers from the good stuff to assure a continual supply of cooking wine!

Provided by cylee

Categories     Very Low Carbs

Time 1m

Yield 1 20 oz bottles

Number Of Ingredients 2

750 ml red wine, drinkable quality
20 ounces water, bottle only

Steps:

  • Once you have gotten over the fact that you've had to open up a perfectly good bottle of wine for that incredible sauce and realized you can't finish it right now, pour the remainder into a 20 oz clean water bottle to neck, seal and put on shelf in freezer. Depending on how much wine you needed for your recipe, this should give you at least one bottle and enough to start a second.
  • This extra bottle gives you room for those "not quite a glass" leftovers from the good bottles. Add to your freezer stash as available.
  • I keep several of these bottles handy for cooking. The wine doesn't go rancid, doesn't freeze, and actually seems to strengthen in taste. It also doesn't take away from the drinking stash! : ).

LEBKUCHEN (GERMAN CHRISTMAS HONEY COOKIES)

Lebkuchen (German Christmas Honey Cookies) image

This recipe is from an OLD betty crocker cookbook and is my absolute favorite Christmas cookie. My MIL sends a batch every year and is one of my favorite things of the season. DO NOT overbake these or they will become so hard that you might need to have dental work done (lol) If the cookies are too hard she suggests placing them in an airtight container with an apple slice. I did not include chilling time in the recipe.

Time 1h10m

Yield 72 cookies

Number Of Ingredients 18

1/2 cup honey
1/2 cup molasses
3/4 cup brown sugar
1 egg
1 tablespoon lemon juice
1 teaspoon lemon rind, grated
2 3/4 cups flour, sifted
1/2 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon clove
1 teaspoon allspice
1 teaspoon nutmeg
1/3 cup citron, chopped
1/3 cup nuts, chopped
whole blanched almond
1 cup sugar
1/2 cup water
1/4 cup confectioners' sugar

Steps:

  • Mix honey and molasses and bring to a boil. Remove from heat and cool completely.
  • Stir in brown sugar, egg, lemon juice and lemon rind.
  • Sift together flour, baking soda and spices, then stir into the honey-molasses mix.
  • Mix in the citron and chopped nuts, place the dough in the refrigerator and chill overnight.
  • Roll out a small amount of dough at a time to 1/4 inch thick, keeping the rest in the fridge. You can either cut out oblong shapes about 1 1/2" x 2 1/2" or just cut out circle shapes about 2" in diameter.
  • Place on a GREASED baking sheet about 1" apart.
  • Place 3 almonds on top of each cookie in a flower shape, and place in a 400 deg oven for 10-12 min or until no imprint remains when touched lightly.
  • While cookies bake, make glaze by boiling the water and sugar to 230 degrees - until it just barely begins to thread.
  • Remove from heat and stir in confectioners sugar.
  • Brush the hot glaze lightly over the cookies (if it gets grainy reheat slightly with a little water to thin again).

MELT IN YOUR MOUTH TEA COOKIES

Melt in Your Mouth Tea Cookies image

These simple cookies will melt in your mouth and will look pretty too. This is one of my mom's favorite Christmas cookie recipes that I found in her Baking is Fun! cookbook from 1948 (the cookbook has a $.25 price on it). The book calls these "Holiday Nuggets" which doesn't sound too appetizing to me, so I have renamed them. I hope you love them as much as I do!

COUSCOUS FOR PEOPLE WHO HATE COUSCOUS

Couscous for People Who Hate Couscous image

My dad used to absolutely hate couscous - Until I made it for him. Highly recommended for broadening the horizons of picky eaters - Also makes a great stuffing if you add cheese.

1 teaspoon ground rosemary
1 teaspoon ground paprika
1 teaspoon ground turmeric
1 teaspoon ground cinnamon
