½ cup plain fat-free Greek yogurt
¼ cup reduced-fat sour cream
½ cup sun-dried tomatoes, sliced
5 cloves garlic, minced
1 (14.5 ounce) can petite diced tomatoes, drained
2 tablespoons sugar, or more to taste
1 tablespoon tomato paste
salt and freshly ground black pepper to taste
1 ½ cups baby spinach
crushed red pepper flakes

PASTA WITH CHICKEN, SUN-DRIED TOMATOES, GORGONZOLA AND PINE NUTS

Pasta with Chicken, Sun-Dried Tomatoes, Gorgonzola and Pine Nuts image

Categories     Cheese     Chicken     Nut     Pasta     Poultry     Tomato     Sauté     Dinner     Blue Cheese     Ham     Pine Nut     Prosciutto     Bon Appétit     Sugar Conscious     Peanut Free     Soy Free     No Sugar Added

Yield Serves 4

Number Of Ingredients 9

1/ 2 cup chopped drained oil-packed sun-dried tomatoes (2 tablespoons oil reserved)
2 skinless boneless chicken breast halves (about 9 ounces total)
1 pound gnocchi pasta or medium shell pasta
4 garlic cloves, minced
1/2 cup chopped fresh basil
1/2 cup canned low-salt chicken broth
1/2 cup crumbled Gorgonzola cheese (about 2 ounces)
1/4 cup chopped prosciutto
1/4 cup pine nuts, toasted

Steps:

  • Heat 1 tablespoon oil reserved from tomatoes in heavy large skillet over medium-high heat. Add chicken to skillet and sauté until cooked through, about 3 minutes per side. Transfer chicken to plate and cool; do not clean skillet. Cut chicken into 1/2-inch pieces.
  • Cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain pasta; transfer to large bowl.
  • Meanwhile, heat remaining 1 tablespoon tomato oil in same skillet over medium-high heat. Add garlic; sauté until tender, about 1 minute. Add sun-dried tomatoes, chicken, basil, broth, cheese and prosciutto to skillet and bring to boil.
  • Add sauce to pasta and toss to coat. Season to taste with salt and pepper. Top with pine nuts and serve.

Tips:

  • Use high-quality ingredients, especially the Gorgonzola cheese and sun-dried tomatoes. Freshly grated Parmesan cheese also makes a big difference in flavor.
  • Don't overcrowd the pan when cooking the pasta. This will prevent the pasta from cooking evenly and becoming mushy.
  • Cook the pasta al dente, which means "to the tooth." This means that the pasta should be slightly firm to the bite.
  • Use a large skillet or Dutch oven to cook the sauce. This will give the sauce plenty of room to bubble and thicken.
  • Don't boil the sauce. Simmer it gently over low heat until it has thickened to your desired consistency.
  • Season the sauce to taste with salt, pepper, and additional herbs or spices, if desired.
  • Serve the pasta immediately, garnished with fresh parsley or basil and additional grated Parmesan cheese.

Conclusion:

Fettuccine Gorgonzola with Sun-Dried Tomatoes is a delicious and easy-to-make pasta dish that is perfect for a weeknight meal or a special occasion. The creamy Gorgonzola sauce, combined with the tangy sun-dried tomatoes and fresh herbs, creates a flavorful and unforgettable dish. This recipe is sure to become a favorite in your kitchen!
