You can add more garlic and adjust the rest of the seasonings to taste...but for me..the lime juice was the best addition to the sauce! If you like it spicy, add one more chili pepper to the mix! 1 tablespoon extra virgin olive oil
1 onion, finely chopped
2 garlic cloves, minced
1 hot red chili pepper, fresh, seeded and minced
4 tomatoes, cut into 1/2 inch pieces
3/4 teaspoon sea salt, fine
1/8 teaspoon black pepper, freshly ground
1/2 cup fresh cilantro, chopped
12 ounces fettuccine pasta
2 avocados, ripe, peeled and chopped
2 tablespoons lime juice, freshly squeezed
3 tablespoons extra virgin olive oil (optional)

Steps:

  • Place a large pot of water on to boil.
  • Heat the 1 tablespoon of olive oil in a large skillet, over medium heat. Add the onion, garlic and chili pepper; cook until softened, about 5 minutes. Add the tomatoes, salt & pepper and cook, stirring often, until the sauce has thickened slightly, about 10 minutes.
  • Remove from the heat, and stir in the cilantro. Keep warm. Meanwhile, in a large pot of slightly salted water, cook the noodles until just tender, about 8-10 minutes. Drain well and transfer to a warmed serving bowl.

1 tablespoon salt (or to taste)
1 lb fresh pasta (your choice)
3 large ripe avocados
3 tablespoons fresh lime juice (or lemon)
3 cups ripe tomatoes, peeled, seeded and chopped
3/4 cup red onion, finely chopped
2 cups fresh basil, chopped
fresh ground black pepper
parmesan cheese, freshly grated (for passing)
basil sprig (to garnish)

Steps:

  • In a large pot, bring 4 quarts water to a rapid boil over high heat. Stir in 1 tablespoons salt. Drop in pasta and cook, stirring frequently, until tender but still firm to the bite.

1 tsp rapeseed oil
1 large onion, sliced, plus 1 tbsp finely chopped
1 orange pepper, deseeded and cut into chunks
2 garlic cloves, grated
2 tsp mild chilli powder
1 tsp ground coriander
½ tsp cumin seeds
400g can chopped tomatoes
196g can sweetcorn in water
1 tsp vegetable bouillon powder
1 avocado, stoned and chopped
1/2 lime, zest and juice
handful coriander, chopped, plus extra to serve

  • Cook the pasta in salted water for 10-12 mins until al dente. Meanwhile, heat the oil in a medium pan. Add the sliced onion and pepper and fry, stirring frequently for 10 mins until golden.
