1/2 cup minced shallot
2 tablespoons unsalted butter
1/2 cup dry white wine
1/2 cup chicken broth
1/2 pound fresh morels (available seasonally at specialty produce markets and some supermarkets), washed well, patted dry, and trimmed
1/2 cup heavy cream
6 ounces mild goat cheese such as Montrachet, crumbled (about 1 1/2 cups)
3/4 pound asparagus, trimmed, cut into 1/2-inch pieces, and cooked in boiling salted water for 2 to 3 minutes, or until tender
1/4 cup minced fresh chives
3/4 pound fettuccine

Steps:

  • In a heavy skillet cook the shallot in the butter over moderately low heat, stirring, until it is softened, add the wine, and simmer the mixture until the wine is reduced by half. Add the broth and the morels, sliced crosswise, and simmer the mixture, covered, for 10 minutes, or until the morels are tender. 3 garlic cloves, minced
1/2 pound fresh morel mushrooms, quartered
Salt and freshly ground pepper, to taste
1/2 cup chicken or vegetable stock
Leaves from 5 large fresh thyme springs, coarsely chopped
Juice of 1 lemon
1 pound fresh fettuccine
1/2 cup pine nuts, lightly toasted
Handful of fresh flat-leaf parsley leaves, coarsely chopped
1 cup grated Parmigiano-Reggiano cheese

Steps:

  • 1 Asparagus, White Onion, Morel Mushrooms, Chicken Stock, Thyme, Lemon, Fettuccine, Pine Nuts, Parsley, Parmigiano-Reggiano Cheese. 2 Bring a large pot of salted water to a boil over high heat. Add the asparagus and cook for 1 minute. Using a large skimmer, transfer the asparagus to a colander, reserving the cooking water. Run cold water over the asparagus to preserve its bright green color and to stop the cooking. Drain the asparagus and set aside. 3 In a large fry pan over medium heat, warm the 1/3 cup olive oil. Add the onion and sauté until soft and just starting to turn golden, about 5 minutes. 4 Add the garlic, morels and asparagus, season with salt and pepper and sauté for 2 minutes. Add the stock and simmer until the vegetables are tender, 4 to 5 minutes. Add the thyme and lemon juice and mix well. 5 Meanwhile, return the reserved asparagus-cooking water to a boil over high heat. Add the pasta and cook until al dente (tender but firm to the bite), about 3 minutes. Drain well and add to the fry pan. 6 Add the pine nuts and parsley and toss briefly to blend all the ingredients. Taste and adjust the seasonings, and add a drizzle of olive oil. 7 Transfer the pasta to a warmed large, shallow bowl and sprinkle about 3 tablespoons of the cheese over the top. Pass the remaining cheese at the table. Serve immediately.

1/2 cup shallots, finely chopped
16 asparagus spears, trimmed and cut into 2-inch pieces
1 tablespoon finely chopped garlic
1 cup dry white wine
1 tablespoon unsalted butter
4 lasagna sheets
12 ounces Taleggio or triple cream cow's milk cheese of your choice
2 ounces Parmesan cheese, grated, plus more for garnish
1/2 cup fresh basil, shredded

2 tablespoons sweet butter
2 tablespoons chopped shallots
1/2 cup Madeira wine
1 cup hot chicken stock
1 pound fresh fettuccine noodles, cooked according to directions on package
1/2 cup heavy cream
2 tablespoons fresh sage, finely chopped
1/4 cup finely julienned Smithfield ham (about 3 ounces)

Steps:

  • To clean morels: Cut off tough bottom of stem. Wash in 3 soaks of cold water. To first soak add 2 tablespoons salt and remove any wildlife that is drawn out.
