Steps:
- 1. Preheat oven to 375^. Butter or spray a baking pan. Set aside. Wash stem and core apples. Then remove apple pulp from apples, leaving about 1/4-inch shell all around, being careful not to break apples. Dip apples in salted water to prevent browning. Drain upside down on paper towels. Set aside.
- 2. In a large bowl combine the remaining ingredients, plus the apple pulp, but not the rum. Mix well to combine. Place apples in prepared baking dish and fill with this mixture. Pour melted butter evenly over mixture in apples. Drizzle some of the rum over the apples and mixture; reserving some of the rum to baste the apples halfway into the baking.Add a small amount of water(1/4 cup)bottom of the pan. Cover or tent apples with foil the first 20 minutes of baking. Then remove foil to finish the baking.
- 3. Bake in oven for 20 to 25 minutes more or until apples are wrinkled and filling is bubbly. Drizzle with some of the drippings or more rum. Serve with a dollop of ice cream.
Tips:
- Choose the Right Apples: Select firm, tart apples that will hold their shape during baking. Granny Smith, Honeycrisp, and Braeburn are all good choices.
- Core the Apples Properly: Use an apple corer or a sharp knife to remove the core of the apple, leaving a 1-inch hole in the center. Be careful not to cut all the way through the bottom of the apple.
- Use a Variety of Fillings: Get creative with your fillings! You can use anything from traditional cinnamon sugar to more unique options like dried cranberries, walnuts, or even chocolate chips.
- Pack the Filling Tightly: Once you've chosen your filling, pack it tightly into the center of the apple. This will help to prevent the filling from spilling out during baking.
- Top with Butter and Spices: Before baking, top each apple with a pat of butter and a sprinkle of cinnamon sugar or other spices. This will add extra flavor and help to create a crispy topping.
- Bake at the Right Temperature: Bake the apples at 375°F for 30-40 minutes, or until they are tender and the filling is bubbling. Check the apples regularly to make sure they don't overcook.
- Serve Warm or Cold: Baked apples can be served warm or cold. If you're serving them warm, top them with a scoop of vanilla ice cream or whipped cream. If you're serving them cold, chill them in the refrigerator for at least 2 hours before serving.
