Time 27m

Number Of Ingredients 8

2 ounces pecans, 57g
4 tablespoons unsalted butter, 2oz, 57g
1/2 cup granulated sugar
2 tablespoons liquid honey, 30ml
1/4 cup all-purpose flour, 1.5oz
pinch of salt
1 teaspoon pure vanilla extract
1/2 cup chocolate chips, any kind, semisweet used here

Steps:

  • Preheat the oven to 350°F. Line a baking sheet with parchment paper or a silicone mat and set aside. In a food processor, process the pecans until finely ground. You should end up with 1/2 cup of ground pecans. Set aside. In a medium saucepan, combine the butter, sugar and honey over medium heat. Cook, stirring, until the butter is melted and the sugar is dissolved. Bring just to a boil and then remove from the heat. Stir in the ground pecans, flour, salt and vanilla until just combined. Let the batter cool for 4-5 minutes. Drop by the teaspoonful onto the prepared baking sheet, leaving at least 3 inches between the cookies. You should have 6-8 per baking sheet. Bake for 10-12 minutes, or until they are evenly browned. Let cool on the baking sheet for several minutes until they start to firm up and then transfer the cookies to a wire rack to cool completely. In a small bowl, melt the chocolate chips in the microwave at 50% power, stirring after every 30 seconds until almost completely melted. Continue stirring until the chocolate is totally melted and then drizzle it over the cooled cookies. Let the chocolate set and then store the cookies in an airtight container at room temperature for 3-5 days.

CHOCOLATE LACE SANDWICH COOKIES

Chocolate Lace Sandwich Cookies image

This is a delicious sandwich cookie. My mom's recipe originally called for a layer of semisweet chocolate in between 2 lace cookies, but I decided to try Nutella® instead and love the result! Store in an airtight container so cookies stay crispy.

Yield Makes about 40 cookies

Number Of Ingredients 6

1 stick (1/2 cup) unsalted butter, softened
3/4 cup firmly packed light brown sugar
2 tablespoons all-purpose flour
2 tablespoons milk
1 teaspoon vanilla extract
1 1/4 cups old-fashioned rolled oats

Steps:

  • In a bowl cream the butter with the brown sugar until the mixture is light and fluffy and beat in the flour, the milk, and the vanilla. Stir in the oats, drop rounded teaspoons of the dough about 3 inches apart onto ungreased baking sheets, and bake the cookies in batches in the middle of a preheated 350°F. oven for 10 to 12 minutes, or until they are golden. Let the cookies stand on the sheets for 1 minute, or until they are just firm enough to be moved with a metal spatula. (If desired, turn the cookies upside down on the sheets and, working quickly, roll them into cylinders on the sheets. If the cookies become too hard to roll, return them to the oven for a few seconds and let them soften.) Transfer the cookies to a rack and let them cool completely.

Tips:

Tips:

  • Chill the dough before rolling it out. This will help prevent the cookies from spreading too much in the oven.
  • Use a sharp knife to cut the dough into strips. This will help ensure that the cookies have clean edges.
  • Bake the cookies until they are golden brown around the edges. This will help ensure that they are cooked through without being overcooked.
  • Let the cookies cool completely before serving. This will help them set and firm up.
  • Store the cookies in an airtight container. This will help them stay fresh for up to 2 weeks.

Conclusion:

Lace cookies are a delicious and delicate cookie that can be enjoyed by people of all ages. They are perfect for any occasion, from a simple snack to a special dessert. With a little planning and effort, you can easily make these cookies at home.

Here are a few additional tips for making lace cookies:

  • If you don't have a lace cookie maker, you can use a regular cookie sheet. Just be sure to grease the sheet well before baking the cookies.
  • You can use any type of sugar in this recipe. White sugar, brown sugar, or even honey can be used.
  • If you want to add a little extra flavor to your cookies, you can add a teaspoon of vanilla extract or almond extract.
  • Lace cookies are also a great way to use up leftover egg whites. Simply freeze the egg whites in an airtight container until you are ready to use them.
