Provided by Sandra Lee

Time 25m

Yield 4 servings

Number Of Ingredients 13

1 tablespoon canola oil
1/2 medium onion, diced
1 carrot, diced
2 stalks celery, diced
2 large red-skinned potatoes, diced
1/2 pound sweet Italian sausage, casings removed
1 teaspoon paprika
1 teaspoon chopped garlic
1/2 teaspoon red pepper flakes
Kosher salt
1 teaspoon white vinegar
4 large eggs
Freshly ground black pepper

Steps:

  • Heat the canola oil in a large skillet over medium heat. Add the onion, carrot, celery, potatoes, sausage, paprika, garlic, red pepper flakes and 1/2 teaspoon salt. Saute, stirring frequently, until the potatoes and carrots are tender and the sausage is cooked through, about 15 minutes.
  • Meanwhile, bring a medium pot of water to a simmer over low heat and add the vinegar. Crack an egg into a small bowl and carefully slide it into the simmering water. Quickly repeat with the remaining eggs. Using a slotted spoon, carefully corral the white of each egg around its yolk. Poach the eggs until the whites are firm, or to the desired degree of doneness, 3 to 5 minutes.
  • Divide the hash among 4 plates. Top each with a poached egg. Season with salt and black pepper.

BREAKFAST HASH

Provided by Ree Drummond : Food Network

Time 40m

Yield 4 servings

Number Of Ingredients 12

6 pieces peppered bacon, chopped
4 large eggs
2 sweet potatoes, peeled and diced into 1/2-inch pieces
4 parsnips, peeled and diced into 1/2-inch pieces
2 cups Brussels sprouts, quartered
1 medium red onion, chopped
3 cloves garlic, minced
Kosher salt and freshly ground black pepper
1 Roma tomato, diced
1 cup crumbled goat cheese
1/4 cup fresh parsley leaves
8 leaves basil, chiffonade

Steps:

  • Line a plate with a paper towel and set aside. Heat a large nonstick skillet over medium-high heat. Fry the bacon, stirring occasionally, until crisp, 4 to 5 minutes. Remove the bacon to the lined plate with a slotted spoon or spatula.
  • Remove all but 2 tablespoons of grease from the skillet, reserving the remaining grease. Fry the eggs in the bacon fat for 2 to 3 minutes. Remove to a plate and cover with a paper towel to keep warm.
  • Add 1 more tablespoon bacon grease and turn up the heat to high. Add the sweet potatoes, parsnips, Brussels sprouts, onion, garlic and some salt and pepper, then cook, stirring occasionally, for 3 to 4 minutes. Deglaze the pan with 1/4 cup of water, then put the lid on and steam for 1 to 2 minutes.
  • Place fried eggs on top of hash and sprinkle over the bacon, diced tomatoes, goat cheese, parsley and basil.

Tips:

  • For perfectly crispy potatoes, soak them in cold water for at least 30 minutes before cooking, then pat them dry before roasting.
  • To save time, use pre-cooked bacon or sausage. Or, cook your bacon or sausage ahead of time and store it in the refrigerator for up to 3 days.
  • Feel free to customize the vegetables in your hash. Some other great options include bell peppers, mushrooms, zucchini, and spinach.
  • To make a vegetarian version of this dish, simply omit the bacon and sausage. You can also add more vegetables, such as tofu or tempeh, to make up for the protein.
  • Serve your hash with a side of eggs, avocado, or salsa for a complete meal.

Conclusion:

The First Watch Farmhouse Hash is a delicious and hearty breakfast or brunch dish that is perfect for a lazy weekend morning. It is also a great way to use up leftover vegetables. With its crispy potatoes, savory bacon and sausage, and fresh vegetables, this hash is sure to please everyone at the table.
