6 large eggs
2 tablespoons 2% milk
1/4 teaspoon pepper
1 tablespoon canola oil
1 cup shredded cheddar cheese
3/4 cup diced fully cooked ham
4 flour tortillas (8 inches), warmed

Steps:

  • In a small bowl, whisk the eggs, milk and pepper. In a large skillet, heat oil. Add egg mixture; cook and stir over medium heat until eggs are completely set. Stir in cheese and ham. , Spoon egg mixture down the center of each tortilla; roll up. Freeze option: Wrap cooled egg wrap in foil and freeze in a freezer container. To use, thaw in refrigerator overnight. Remove foil; wrap tortilla in a moist paper towel. Microwave on high until heated through, 30-60 seconds. Serve immediately.

1 1/4 cups Original Bisquick™ mix
2 cups milk
12 eggs
1 teaspoon salt
1/4 teaspoon ground red pepper (cayenne)
4 cups lightly packed fresh baby spinach
1 cup diced jarred roasted red bell peppers, patted dry (12-oz jar)
2 cups shredded mozzarella cheese (8 oz)
1 cup shredded Parmesan cheese (4 oz)
1 package (1.25 oz) hollandaise sauce mix
1/3 cup diced tomato

Steps:

  • Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In large bowl, beat Bisquick™ mix, milk, 4 of the eggs, 3/4 teaspoon of the salt and the red pepper with whisk until blended. Stir in spinach, bell peppers and cheeses. Pour into baking dish.
  • Bake uncovered 25 minutes. Spray bottom of metal 1/4 cup measuring cup or bottom of small (2-inch diameter) glass with cooking spray; carefully make 8 wells in partially baked mixture in baking dish. Crack an egg into each well. Sprinkle with remaining 1/4 teaspoon salt. Bake 12 to 16 minutes longer or just until yolks are set. Cool 5 minutes.
  • Meanwhile, make hollandaise sauce as directed on package. Drizzle 1/2 cup of sauce over top of casserole. Top with tomato. Serve with remaining sauce.

Serve this with a side of fruit for a great start to any day. The recipe was designed for 2 but can be easily adjusted to serve more.

2 flour tortillas, or
2 wraps, gluten free
2 sliced natural applewood smoked bacon, center cut
4 -5 mushrooms, sliced
1/4 cup chopped red onion
1/2 jalapeno pepper, seeded and minced
3 eggs
2 tablespoons Greek yogurt
1 cup Baby Spinach, packed

Steps:

  • Cook the bacon until crisp in a heavy skillet. Remove bacon and wipe out skillet with a paper towel. Add in the sliced mushrooms and saute until nicely browned. Add in chopped onion and jalapeno pepper.
  • Beat the eggs with the yogurt and pour over cooked vegetables. Using a spatula push the uncooked portions of the egg to the center of the pan. Cook until eggs are set. Season to taste with salt and pepper.
  • Microwave the wraps for 10 to 15 seconds. Divide the egg mixture between the wraps, top with crisped bacon and spinach leaves. Wrap burrito style, secure with a toothpick and serve.

6 large egg yolks
3 tablespoons lemon juice
1 pinch ground white pepper
½ cup butter, cut into small cubes
salt to taste
1 pinch ground paprika
1 teaspoon white vinegar
8 large eggs
8 slices Deli Thin Smoked Ham-Water Added OM
½ cup fresh spinach, or to taste
4 medium English muffins, split
2 tablespoons butter, softened, or to taste

Steps:

  • Prepare Hollandaise: Whisk together egg yolks, lemon juice, and pepper in a pan over low heat. Add 1/2 of the butter and continue to whisk until the butter is melted and incorporated. Add remaining butter and salt and whisk until melted. Sprinkle in paprika. Turn heat off and cover with a lid to keep warm.
  • Fill a large saucepan with 5 to 8 inches of water and bring to a gentle simmer. Add vinegar and reduce heat to low. Carefully break eggs into the simmering water and cook until whites are firm and the yolks have thickened but are not hard, 3 to 4 minutes. Remove the eggs from the water with a slotted spoon, dab on a kitchen towel to remove excess water, and place onto a warm plate.
  • While the eggs are poaching heat ham in a skillet over medium-high heat until warm, 2 to 3 minutes, microwave spinach sprinkled with a little water on a plate for 30 seconds, and toast English muffins.
  • Spread butter on toasted muffins. Top each half with a slice of ham, some spinach, and a poached egg. Drizzle with a healthy helping of Hollandaise and serve immediately.

3/4 teaspoon Dijon mustard
2 ounces baby spinach, roughly chopped (2 cups)
Coarse salt and ground pepper
1 English muffin, split and lightly toasted
1 ounce sliced Canadian bacon
1 large egg

Steps:

  • In a small saucepan, melt butter over medium. Whisk in flour and cook until bubbling, about 20 seconds, then whisk in milk, mustard, and 1 tablespoon water. Cook, whisking, until mixture is thickened and smooth, 1 minute. Add spinach and cook, stirring, until spinach is wilted and coated, 1 to 2 minutes. Season with salt and pepper and spoon onto bottom half of English muffin.

1 flour tortillas or 1 sundried tomato tortilla
1 egg, fried
3 slices bacon, cooked
3/4 cup lettuce, shredded
1/3 cup tomatoes, chopped
1/4 cup onion, chopped
1/2 cup cheddar cheese, grated
1 1/2 tablespoons ketchup
2 tablespoons sour cream
salt and pepper
hot sauce (optional)

Steps:

  • Cook Bacon.
  • Set aside.
  • Shred Lettuce, grate cheese, chop onions& tomatoes.
