FLOUNDER WITH WHITE WINE SAUCE
Found in the magazine DeenBros Good Cooking. I am going to try this in the oven and bake it...what a simple and easy clean-up. Of course, it would take longer to bake (for the cooking time).

Steps:
- Preheat oven to low. Mix the flour, salt and pepper together and dip the fillets in the mixture to coat both sides. Shake off excess. Heat a large skillet very hot, add the clarified butter and when it is very hot fry the fillets quickly, turning once, until golden brown on both sides (about 2 minutes). Remove fillets to dinner plates and keep warm in the oven.
- Pour off any remaining clarified butter or oil from the skillet, add the wine, lemon juice and shallots and boil hard over high heat until reduced to about 1/8 cup. Add the cream and boil until reduced once again to about 1/4 cup. Lower the heat and vigorously whisk in the unsalted butter bit by bit, incorporating each piece almost completely before adding the next. As the last piece disappears, remove the pan from the heat. Do not boil the sauce after all the butter is in. 3.
- Spoon a small amount of the sauce over the fillets in the oven, return the skillet to the heat, add the chopped pasta and toss with the rest of the sauce until heated through. Spoon the pasta onto the dinner plates and serve with a tossed salad.

Steps:
- Place the flour on a plate and season with salt and pepper. Lightly dust the flounder on both sides with the seasoned flour. Heat 2 teaspoons of the olive oil in a large, heavy nonstick skillet over medium-high heat. Place the flounder in the pan and saute on one side for about 90 seconds. Turn the fish over. Squeeze the lemon juice on the fish and sprinkle the scallions evenly over the fillets. Cook for 30 seconds and divide among 4 warm plates.
- Place the remaining teaspoon of olive oil in the skillet. Add the mushrooms and season them lightly with salt and pepper. Saute until soft, shaking the pan constantly, about 3 to 4 minutes. Add the wine, increase the heat to high and continue to cook for about 1 minute, until the smell of alcohol disappears. Remove the pan from the heat, add the spinach and toss quickly until it barely wilts. Taste and season again with salt and pepper. Divide the spinach over each flounder fillet and serve immediately.

Tips:
- Choose the right flounder: Look for flounder that is firm and has a mild, sweet flavor. Avoid any fish that is slimy or has a strong odor.
- Use a good quality white wine: The wine you use will greatly affect the flavor of the sauce, so choose a wine that you enjoy drinking. A dry white wine, such as a Chardonnay or Pinot Grigio, is a good option.
- Don't overcook the flounder: Flounder is a delicate fish, so it is important not to overcook it. Cook the fish until it is just cooked through, about 3-4 minutes per side.
- Serve immediately: Flounder with white wine sauce is best served immediately. The sauce will thicken as it stands, so if you need to make it ahead of time, be sure to reheat it gently before serving.
Conclusion:
Flounder with white wine sauce is a classic dish that is both elegant and simple to prepare. The delicate flavor of the flounder pairs perfectly with the rich and creamy sauce. This dish is sure to impress your guests, whether you are serving it for a special occasion or a casual weeknight meal.
