2 whole oranges with peel
6 eggs
1 pinch saffron powder
1 ¼ cups white sugar
½ teaspoon baking powder
1 ¼ cups finely ground almonds (almond meal)
1 teaspoon finely chopped candied orange peel

  • Bake until a small knife inserted into the center comes out clean, about 1 hour. Allow the cake to cool in the pan. Tap out onto a serving plate when cool.

Tips:

  • Use a food processor or blender to grind the almonds and sugar into a fine powder. This will help to create a smooth and even batter.
  • Be sure to measure the cake batter accurately. Too much batter will cause the cake to overflow the pan, and too little batter will result in a thin and dense cake.
  • Bake the cake in a preheated oven. This will help to ensure that the cake rises evenly and cooks through properly.
  • Do not overbake the cake. A toothpick inserted into the center of the cake should come out clean, with just a few moist crumbs attached.
  • Let the cake cool completely before serving. This will help to prevent the cake from falling apart.
  • Serve the cake with fresh fruit, whipped cream, or ice cream.

Conclusion:

This flourless mandarin cake is a delicious and easy-to-make dessert that is perfect for any occasion. It is light and fluffy, with a moist and tender crumb. The mandarin oranges add a bright and citrusy flavor that is sure to please everyone. Whether you are serving it for a special occasion or just as a simple treat, this cake is sure to be a hit.
