I love anything with peanut butter, so when I saw this recipe for soft banana cookies with a yummy peanut butter filling, I had to make them. Use a cookie scoop to keep them nicely rounded and all the same size. -Jessie Sarrazin, Livingston, Montana

I always seem to have leftover bananas, and I usually make banana bread, in different variatons. These whoopie pies, or gobs, are another great thing to make with overripe bananas. This recipe is adapted from Baking Bites.

BANANA WHOOPIE PIES

Banana Whoopie Pies image

Right out of the Martha Stewart September Living magazine. Couldn't wait to try these and they did not disappoint. Much easier then they sound. I myself used dark brown sugar is that is what I had and I misread the recipe using the entire teaspoon vanilla in the batter then adding the extra in the filling. Came out wonderful.

Tips:

  • Use ripe bananas for the best flavor and texture. Overripe bananas will have a mushy texture and won't hold up well in the whoopie pies.
  • Make sure the cream cheese is softened to room temperature before mixing it with the other ingredients. This will help to create a smooth and creamy filling.
  • If the whoopie pies are too soft after being filled, chill them in the refrigerator for 30 minutes before serving. This will help to firm them up.
  • The whoopie pies can be stored in an airtight container in the refrigerator for up to 3 days. They can also be frozen for up to 2 months.

Conclusion:

These Freezy Cool Banana Whoopie Pies are a delicious and easy-to-make treat that is perfect for any occasion. They are made with a moist banana cake, a creamy cream cheese filling, and a chocolate ganache. The whoopie pies are then frozen, which gives them a cool and refreshing texture. They are sure to be a hit with everyone who tries them!
