These peanut butter cookies are soft, chewy, and absolutely delicious!

Provided by Ali

Time 30m

Number Of Ingredients 12

2 2/3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cornstarch
1 teaspoon salt
1 cup (2 sticks) butter, softened
1 cup granulated sugar
1 cup packed light brown sugar
1 cup peanut butter (smooth or crunchy)
2 teaspoons vanilla extract
2 large eggs
(optional: 1/2 cup granulated sugar for rolling the dough balls)

Steps:

  • Preheat oven to 350˚F. Line a baking sheet with parchment paper; set aside.
  • Whisk together flour, baking powder, baking soda, cornstarch and salt in a large bowl and set aside.
  • In an electric mixer fitted with the paddle attachment, beat together the softened butter, granulated sugar and brown sugar on medium speed until light and fluffy (about 3 minutes). Mix in peanut butter until it is incorporated and smooth. Add vanilla and eggs, one at a time, scraping the bowl down after each addition. Reduce mixer speed to low and slowly add dry ingredients until they are just incorporated and the batter is smooth, being careful not to over-mix.
  • Form the dough into 1.5-tablespoon round balls and place on the prepared baking sheet. (If you'd like, you can roll each of these balls in a bowl of granulated sugar before adding them to the baking sheet.) Press a criss-cross pattern into each dough ball with a fork to flatten, being sure that each dough ball is at least 2 inches apart. Bake for 10-12 minutes, until the edges are golden brown and the centers are slightly puffy. Remove from the oven, and then transfer the cookies to a cooling rack to cool.
  • Serve warm, or store in a sealed container for up to 4 days. Or freeze for up to 3 months.

Time 23m

Number Of Ingredients 9

1 ½ cups flour
1 teaspoon baking soda
¼ teaspoon salt
¾ cup creamy peanut butter
½ cup butter (room temperature)
¾ cup brown sugar
¼ cup granulated sugar ((plus 2 tablespoons for rolling))
1 large egg
1 ½ teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees and very lightly grease a baking sheet or line with a baking mat.
  • In a medium bowl whisk together flour, baking soda, and salt. Set aside.
  • In a large bowl cream together butter, peanut butter, brown sugar, and 1/4 cup granulated sugar for 2-3 minutes until light and fluffy. Mix in egg and vanilla until blended.
  • Add dry ingredients to wet ingredients and mix until combined (do not over mix). Roll dough into balls (two regular size cookie scoops or about 3 tablespoons, the balls should be fairly big - this is the key to a super soft texture!)
  • Roll cookie dough balls in remaining 2 tablespoons sugar, then place on baking sheet 2-3 inches apart. Use a fork to gently press a criss-cross pattern into each cookie dough ball, only pressing ball down about half way.
  • Bake for 8-9 minutes - DO NOT OVER BAKE. The cookies should just begin to crack on top. Allow to cool 1-2 minutes on baking sheet, then transfer to a cooling rack. Store in an airtight container at room temperature up to 5 days (they are softest on day 1 and 2!).

BOUCHON BAKERY'S 'NUTTER BUTTERS'

Bouchon Bakery's 'Nutter Butters' image

This peanut butter sandwich cookie is a smaller version of the gargantuan homemade Nutter Butters served at Bouchon Bakery, Thomas Keller's restaurant in the Time Warner Center. It is pure peanut sophistication; two crunchy, crisp peanut butter cookies filled with pillowy peanut-butter frosting. These cookies spread a fair amount while baking, so be sure to give them plenty of room on the baking sheet and let them cool and firm up before filling. (After reading through some of the reader comments, we retested the original recipe and decided to make the cookies smaller and double the filling. We've edited the below recipe to reflect those changes.)

Yield About 50 cookies

Number Of Ingredients 14

2/3 cup/180 grams creamy peanut butter, preferably Skippy
1 cup/201 grams granulated sugar

2 large eggs
1 1/2 teaspoons vanilla extract

Using an ice cream scoop 1½ inches in diameter (about 1 heaping tablespoon), place balls of dough on parchment-lined baking sheets at least 2 ½ inches apart. Bake until cookies have spread and turned golden brown, about 10 to 12 minutes. Remove from oven and set aside to cool and firm up on the baking sheet, 5 to 10 minutes. FRENCH BUTTERCREAM

French Buttercream image

French buttercream may not be as popular as the Italian or Swiss variety, but it is just as light and creamy. Plus, it is richer and a deeper shade of pale yellow from extra egg yolks. It makes a great cake filling and frosting.

Provided by Food Network Kitchen

Categories     dessert

Time 40m

Yield about 4 cups

Number Of Ingredients 5

2 large eggs plus 6 large egg yolks
1 1/2 cups sugar
Pinch kosher salt
12 ounces (24 tablespoons) unsalted butter, at room temperature, cut into 1-inch pieces
1 teaspoon pure vanilla extract

Steps:

  • Place the whole eggs and yolks in the bowl of an electric mixer fitted with a whisk attachment. Beat on medium-high speed until the eggs are pale yellow and thick, about 5 minutes. (The eggs will hold an indent made with your finger for a few seconds.)
  • Meanwhile, pour the sugar and 1/3 cup water in a medium saucepan set over medium heat. Attach a candy thermometer to the side of the pan and bring to the soft-ball stage, without stirring, 240 degrees F.
  • Begin whipping the eggs again on medium-high speed and slowly drizzle in the hot syrup, aiming the syrup between the side of the bowl and the beaters. Continue to whip until both the bottom of the bowl and the mixture are cool, 10 to 15 minutes. The mixture should be thick, but will not form a peak at this point. Beat in the salt.
  • While still beating on medium-high, add the butter, a few pieces at a time. As the butter is added, the buttercream may appear to thin out some, but it will thicken into firm peaks once all of the butter is added. Beat in the vanilla extract.
  • Use right away or refrigerate in an airtight container overnight. The buttercream may need to be beaten again to smooth out before using.

Tips:

  • Use high-quality peanut butter: The quality of your peanut butter will greatly affect the flavor of your cookies. Look for a peanut butter that is made with 100% peanuts and no added oils or sugars.
  • Chill the dough before baking: Chilling the dough will help the cookies to hold their shape and prevent them from spreading too much in the oven.
  • Use a cookie scoop: A cookie scoop will help you to ensure that all of your cookies are the same size and shape. This will help them to bake evenly.
  • Bake the cookies until they are just set: Overbaking the cookies will make them dry and crumbly. The cookies are done when they are just set around the edges and still slightly soft in the center.
  • Let the cookies cool completely before serving: This will help the cookies to firm up and develop their full flavor.

Conclusion:

French crème peanut butter cookies are a delicious and easy-to-make treat that are perfect for any occasion. With their soft and chewy texture, peanut butter flavor, and hint of vanilla, these cookies are sure to be a hit with everyone who tries them. So next time you're looking for a quick and easy dessert, give these cookies a try! You won't be disappointed.
