2 large russet potatoes - peeled, and sliced into 1/4 inch strips
6 cups vegetable oil for frying

Steps:

  • In a medium bowl, dissolve the sugar in warm water. Soak potatoes in water mixture for 15 minutes. Remove from water, and dry thoroughly on paper towels.
  • Heat oil in deep-fryer to 375 degrees F (190 degrees C). Add potatoes, and cook until golden, 5 to 6 minutes. drain on paper towels. Season with salt to taste.

This classic French potato gratin dish is world famous, and rightly so! I am quite happy to have this as a main meal, with just some crusty bread and a large mixed salad on the side. I have heard that this famous dish was created as a way of encouraging the "Dauphin" (the young prince destined to become King Henri II), to eat up his vegetables, hence the name! Maybe - it is certainly just as popular with children, as it is with adults. Try to slice the potatoes as thinly as possible for the best results. A wonderful accompaniment for all sorts of roast meats, stews, casseroles and poultry. This recipe is not strictly French, using as it does a Swiss cheese.

3 lbs waxy potatoes, peeled and thinly sliced (such as Desiree, Golden Wonder, Maris Piper, Idaho or King Edward)
6 ounces gruyere cheese, grated
3/4 pint double cream
salt
fresh ground black pepper
2 -4 garlic cloves, peeled and crushed
2 sprigs fresh thyme
1 ounce butter
cheese, for topping (optional)

Steps:

  • Preheat the oven to 300F/150C/gas mark 2.
  • Take a heavy-bottomed dish or an ovenproof gratin dish (a Le Creuset is ideal - the potatoes tend not to catch), and grease it will with some of the butter.
  • Layer the potato slices in the dish, slightly overlapping each other, seasoning lightly with the salt and pepper, and sprinkling a liberal amount of cheese on each layer.
  • Sprinkle cheese on the top of the last layer.
  • Put the double cream, garlic and sprigs of thyme in a pan and bring to them gently to the boil, then remove the thyme and pour hot cream over the potatoes.
  • Dot the top of the gratin with the remaining butter and some extra cheese if you wish, and bake for about 1 hr to 1 1/2 hrs, or until the potatoes are soft, and the top is crispy and golden brown.
  • Serve bubbling hot as a main meal or as an accompaniment.

This classic French potato gratin dish literally translates as "Potatoes in the Style of the Baker's wife". The story is, that in the past, a French family would prepare these potatoes and then take them to the local boulangerie, the baker, to be cooked in the even heat of his oven, hence the name. Any sort of good quality stock will do, chicken, lamb, beef or vegetable. For a richer taste, a ratio of 50% hot stock and hot milk/cream can be used. If using lamb stock, it is nice to sprinkle the top of the potatoes with fresh Rosemary, and I often add a sprig of thyme to my potatoes when baking them. I have found that melted butter gives a better result than dotting butter, no burned and upturned edges anymore!

  • Pre-heat oven to 150C/300F/Gas mark 3.
  • Butter a large shallow ovenproof dish.
  • Peel potatoes thinly, do not rinse.
  • Peel and slice the onions thinly.
  • Using a mandolin slice if possible,slice the potatoes very thinly, again do not rinse.
  • Arrange the potatoes over the base of the dish slightly overlapping, sprinkle with a little salt and pepper and then add the sliced onions.
  • Continue until all the potatoes & onions are used up, ending with a potato layer.
  • Pour over the hot stock.
  • Brush with the top of the potatoes with the melted butter.
  • Place the potatoes on the high shelf of the oven for 1 hr to 1 1/2 hrs or until tender and the top layer is a crisp golden brown.
  • Serve immediately with roasted meats, as an alternative to roast potatoes, or with a pot roast, hot-pot and vegetables.

1 medium onion, sliced into rings
3 teaspoons butter

2 lbs yukon gold potatoes, peeled, cut into 1/2-inch thick slices, rinsed well and drained (4-6 medium)
table salt
6 tablespoons unsalted butter
2 garlic cloves, minced (about 2 teaspoons)
1 -1 1/2 cup whole milk
4 ounces mozzarella cheese, shredded (about 1 cup)
4 ounces gruyere cheese, shredded (about 1 cup)

Steps:

  • Place potatoes in large saucepan; add water to cover by 1 inch and add 1 tablespoon salt. Partially cover saucepan with lid and bring potatoes to boil over high heat. Reduce the heat to medium-low and simmer until potatoes are tender and just break apart when poked with a fork, 12 to 17 minutes. Drain potatoes and dry saucepan.
  • Transfer potatoes to a food processor (this step is important to get the aligot texture). Add butter, garlic, and 1 1/2 teaspoons salt. Pulse until butter is melted and incorporated into potatoes, about ten 1-second pulses. Add 1 cup milk and continue to process until potatoes are smooth and creamy, about 20 seconds, scraping down sides halfway through.
  • Return potato mixture to saucepan and set over medium heat. Stir in cheeses, 1 cup at a time, until incorporated. Continue to cook potatoes, stirring vigorously, until cheese is fully melted and mixture is smooth and elastic, 3 to 5 minutes. If mixture is difficult to stir and seems thick, stir in 2 tablespoons of milk at a time (up to 1/2 cup) until potatoes are loose and creamy. Season with salt and pepper. Serve immediately.

1 small onion, chopped very fine
4 ounces cream cheese
4 ounces sour cream

Shortening or oil for deep fat frying

Steps:

  • Peel potatoes, one at a time, cut into strips the length of the potato and 3/8-inch wide, letting each fall into cold water. When all the strips are cut, soak 10 minutes in cold water. Drain and pat dry on paper toweling.
  • Heat shortening or oil to 330 degrees, add potatoes, about 1 cup at a time, and fry 2 minutes until lightly golden and all sputtering stops. Drain on paper toweling. 1 cup shredded colby-monterey jack cheese
1/3 cup French onion dip

3 -4 lbs bottom round beef roast
salt and pepper
1 (1 1/2 ounce) packet Lipton Onion Soup Mix
1 (18 1/2 ounce) can French onion soup
2 tablespoons Worcestershire sauce
1/4 cup red wine vinegar
2 tablespoons hot sauce (I recommend Sriracha)
3 beef bouillon cubes
5 large potatoes
1 tablespoon minced garlic clove
2 tablespoons cream cheese
1/4 cup milk

Steps:

  • Place roast into crock pot and set on high, salt and pepper to taste.
  • Pour can of French Onion soup over roast.
  • Add Worcestershire, red wine vinegar and hot sauce.
  • Sprinkle packet of onion soup mix on top.
  • Add bouillon cubes into liquid.
  • Cook for 4-5 hours on high.
  • Once beef is cooked through, remove roast, cut into chunks and add back into sauce.
  • Boil potatoes until softened.
  • Mash (with a masher, mixer or ricer) and add garlic, cream cheese and milk to create desired texture.
  • Top potatoes with beef and drizzle with sauce from the pot.

  • Place rack in middle of oven and preheat to 350°F. Place potatoes in a large wide heavy pot. Add 1 1/2 tsp. salt and enough cold water to cover by 2". Bring to a boil over high heat, then reduce heat to medium-low and simmer until potatoes break apart when pierced with the tip of a knife, 35-40 minutes.
  • Meanwhile, cook garlic, cream, and butter in a medium saucepan over medium heat, whisking occasionally, until butter is melted. Whisk in nutmeg, pepper, and 1 Tbsp. plus 1 tsp. salt. Remove from heat.

1 large onion, sliced
2 Tbsp olive oil
2 Tbsp chopped parsley, for garnishing

  • 1. Preheat oven to 375 degrees F. Butter a large baking dish with 1 tablespoon of butter.
  • 2. Bring stock to boil as you slice the potatoes.
  • 3. Thinly slice the potatoes. Add potatoes to a large bowl, season with salt and pepper and toss.
  • 4. Add potatoes and a few pieces of butter to the prepared baking dish. Add enough stock to cover the potatoes by about 2/3's. Press down gently with your hands.

Steps:

  • Peel the potatoes and cut each into 1/4-inch thick slices. Stack a few slices at a time and cut the slices lengthwise into 1/4-inch-wide strips or sticks. There should be about 6 cups. Drop the potatoes into cold water and drain almost immediately. Pat the potatoes dry.
  • Heat the oil to 330 degrees in a skillet or, preferably, a deep fryer. Drop potatoes in batches into hot oil. As the potatoes are fried, shake or stir them so that they cook evenly. Steps:

  • 1. Combine some milk and the beaten eggs in a mixing bowl. Then season [salt is important] the panko bread crumbs with salt and pepper in another bowl. Place some wondra flour in another. This is your "Coating Station".
  • 2. Pre-heat about an inch of oil in a skillet to 350 to 375 degrees.
  • 3. Using a mellon-baller [no larger than an inch-and-a-half], create balls from the chilled mashed potatoes.
  • 4. Coat the potato balls this way: 1] egg, 2] wondra flour, 3] egg, and 4] seasoned panko. Deep fry until golden brown & serve hot!

8 medium red skin potatoes, peeled & boiled
2 large onions, sliced
6-8 medium mini sweet peppers, chopped into rings
3 Tbsp olive oil
1 1/2 c crumbled feta cheese
12 oz shredded cheddar cheese, (3 cups)
1 Tbsp kosher salt
1 Tbsp granulated garlic powder
2 tsp coarse black pepper
2 Tbsp chopped dried chive
6 Tbsp wondra flour, or all purpose
3/4 stick butter(6 tablespoons)
2 large cans evaporated milk
2 can(s) milk cans filled with water
2 c french fried onion rings

Steps:

  • 1. Peel red skin potatoes and add to a large pot, cover with water, add 1 tablespoon of kosher salt, and bring to a boil and cook about 15-20 minutes, until tip of a knife can be inserted into the center and easily released.Drain in colander, set aside to cool and can be sliced as needed. MAY ALSO USE 2 % MILK INSTEAD OF EVAPORATED MILK IF DESIRED.
  • 2. While potatoes are cooling add olive oil to a large skillet then add in the sliced onions and mini pepper rings, saute until onions become translucent and begin to wilt slightly. Remove and set aside.
  • 3. Preheat oven to 350 degrees F. Spray a 9 X13 size casserole dish with non stick cooking spray. Then slice enough cooled potatoes to cover the bottom of the casserole dish. Top with 1/3 of the cooked peppers and onions, then top with about 1/3 of the feta cheese.
  • 4. To make the sauce, add the butter to a large skillet or pot, then add in the wondra or all purpose flour, and stir or WHISK till flour and butter is blended together evenly over medium high heat. Add in the milk and water, and spices, whisk until mixture begins to thicken, & will coat the back of a spoon. Pour about 1/3 of sauce over the first layer of potatoes, then top with 1 cup of shredded cheddar cheese.
  • 5. Repeat until you have used all of the cheeses, peppers and onions, sauce & potatoes to fill the casserole dish.
  • 6. Top with French Fried Onion Rings, then place in preheated 350 degree F. oven and bake for 35-40 minutes until potatoes are hot throughout, and bubbly along edges, and cheese is melted on top.NOTE: TO PREVENT ONION RINGS FROM OVER BROWNING, ADD THEM ON TOP DURING THE LAST 15 MINUTES OF BAKING IN OVEN IF DESIRED.

1/4 cup chopped onion
1/4 cup sliced mushrooms
10 oz thinly sliced potatoes (6 med)
1/8 dried rosemary
1/8 tsp pepper
1/3 cup chicken broth

  • Pre-heat oven 450F Cook mushrooms and onions in a skillet until translucent. Put onions, mushrooms and potatoes in a casserole dish, pour chicken broth over and sprinkle with cheese. Bake covered 30 - 35 minutes until fork tender. Serve immediately.

Tips:
