FRENCH PUY LENTIL SALAD
Have you tried Puy lentils yet? These are small, green lentils from France and have a slight peppery flavor and a firm, yet tender, texture. They hold their shape well and are ideal for a salad, but they do take longer to cook than most other lentils. They do not, however, need pre-soaking. In this salad the mint and lemon juice add a lively, fresh taste, while the balsamic vinegar adds a mellow sweetness.

Steps:
- Peel the half-onion and stud with the cloves.
- Combine onion, lentils, lemon zest, garlic, bay leaf, 1 teaspoon cumin and water in a medium-sized pan.
- Bring to the boil, then reduce heat to medium and cook for 25-30 minutes, or until the water has been absorbed, taking care not to burn- you can add a little more water if needed, but try not to cook much more than 30 minutes as they should be'al dente'.
- Reserve the garlic and chop finely, but discard the onion, lemon zest and bay leaf.
- In a suitable container, whisk together the vinegar, oil, lemon juice, remaining cumin and reserved garlic, to make the dressing.
- Stir the dressing through the lentils with the mint and chopped green onions, then season to taste with salt and pepper.
- Allow to stand for 30 minutes so that the flavors absorb.

FRENCH LENTILS WITH GARLIC AND THYME
This is a classic French way to cook lentils, and it's very easy. Aromatics are sautéed and then simmered with French lentils, also known as Le Puy lentils, for 20 to 25 minutes. It is an easy side dish (shown here with cod baked with prosciutto), redolent of a Provencal feast.

PUY LENTIL SALAD
I love Puy lentils - they're nutty tasting with a lovely texture. If you can't get Puy lentils, brown or green work equally well. This salad is a great, healthy accompaniment to a meal, or as a dish in it's own right. The recipe is from Stephanie Alexander's original edition of the cook's companion. I've adapted it slightly.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Peel outer skins from garlic bulbs and cut about 1/4 inch from the top of each bulb to expose cloves; place each bulb onto a piece of aluminum foil, drizzle each with about 1/2 teaspoon olive oil, and wrap garlic bulbs in the foil. Place wrapped bulbs into a baking dish.
- Bake garlic in the preheated oven until soft, about 30 minutes. Let bulbs cool.
- Place lentils into a 5-quart pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until lentils are tender but not mushy, about 15 minutes; stir occasionally. Drain lentils in a fine-mesh strainer and rinse with cold water to cool; drain again.
- Break garlic bulbs apart and squeeze cloves to release cooked garlic. Place garlic into a large salad bowl and add grape tomatoes, parsley, and green onions. Whisk balsamic vinegar with 1/4 cup olive oil, salt, and black pepper in a small bowl. Fold lentils into tomato mixture and pour dressing over salad; gently toss to coat. Keep refrigerated until serving time.

Tips:
- Choose the right lentils: Puy lentils are the best choice for this salad, as they hold their shape well and have a slightly nutty flavor. If you can't find Puy lentils, you can substitute another type of small, dark lentil, such as black or green lentils.
- Cook the lentils properly: Be sure to rinse the lentils thoroughly before cooking. Cook the lentils according to the package directions, or until they are tender but still hold their shape.
- Use fresh, high-quality ingredients: The fresher the ingredients, the better the salad will be. Use ripe, flavorful tomatoes, cucumbers, and herbs.
- Don't overdress the salad: A little bit of dressing goes a long way. If you add too much dressing, the salad will be soggy.
- Let the salad marinate: Allowing the salad to marinate for at least 30 minutes before serving allows the flavors to meld and develop.
Conclusion:
This French Puy lentil salad is a delicious and healthy dish that is perfect for a summer lunch or dinner. It is packed with protein, fiber, and vitamins, and it is also a good source of antioxidants. The salad is easy to make and can be tailored to your own taste preferences. So next time you are looking for a light and refreshing meal, give this French Puy lentil salad a try. You won't be disappointed!
