HARVEST SPICE MUFFINS (APPLE-PEAR SPICE MUFFINS)

Harvest Spice Muffins (Apple-Pear Spice Muffins) image

With an abundance of quickly ripening pears on the counter, and with a crowd of hungry little people to feed, I came up with these tender, lightly sweet, and surprisingly healthy muffins! They passed the Picky Sibling Test with flying colors. I modified a basic apple muffin recipe from a Pennyslvania bed and breakfast, making changes to make the muffins healthier and more unique. I hope you like them too! I used a mixture of apples and pears (two small Bartlett pears and one very small Pink Lady apple), but you could use just apples if that's all you have available. I also used white whole wheat flour (ground from white wheat), which is lighter than regular whole wheat (ground from red wheat). It has the exact same nutritional value but is not as strong-flavored or "heavy," so try it if you can find it!

Time 50m

Yield 20 muffins

Number Of Ingredients 11

2 eggs
1 cup low-fat milk
1/2 cup olive oil or 1/2 cup canola oil
2 cups diced unpeeled pears, and or 2 cups apples
3 cups white whole wheat flour
1 cup sucanat
4 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg

Steps:

  • Whisk together eggs, milk, and oil until completely blended.
  • Stir in diced fruit.
  • Combine remaining ingredients in separate bowl.
  • Add dry to wet ingredients and stir just until blended.
  • Let batter sit for 15-20 minutes: this is optional, but I think it makes the muffins rise higher. (You could also let the batter sit after you divide it into the muffin cups, instead of before.).
  • Divide batter between 20 greased muffin cups and bake at 400 for 20-25 minutes, until golden brown on top.
  • Serve warm with a drizzle of honey!

Time 2h10m

Yield 6 servings

Number Of Ingredients 19

2 teaspoons ground cinnamon
1 ½ teaspoons ground ginger
½ teaspoon ground allspice
¼ teaspoon ground cloves
¼ teaspoon ground nutmeg
1 cup all purpose flour, divided, plus 1 tablespoon
⅓ cup whole wheat flour
1 ¼ teaspoons baking powder
¼ teaspoon baking soda
½ teaspoon kosher salt
¾ stick unsalted butter, room temperature
½ cup granulated sugar
¼ cup brown sugar
2 large eggs, room temperature
¼ cup apple sauce
1 honeycrisp apple, shredded, plus 2, finely diced, divided
nonstick cooking spray, for greasing
1 ½ tablespoons unsalted butter, melted
2 tablespoons demerara sugar

Steps:

  • Make the apple spice blend: in a small bowl, stir together the cinnamon, ginger, allspice, cloves, and nutmeg.
  • Make the muffins: In a medium bowl, whisk together 1 cup (125 G) all-purpose flour, the whole wheat flour, baking powder, baking soda, salt, and 1 tablespoon of the spice blend.
  • In a large bowl, use an electric hand mixer on medium speed or whisk to beat the butter until light yellow and aerated, about 2 minutes. Add the granulated and brown sugars and continue beating until light, fluffy, and nearly doubled in volume, 2 minutes more. Add the eggs, 1 at a time, beating well after each addition.
  • Add the applesauce and shredded apple and stir with a rubber spatula to incorporate.
  • Add half of the dry ingredients to the wet and gently fold to combine, being careful not to overmix. Add 1¾ cups of the diced apples to the remaining dry ingredients and toss to coat, then add to the wet ingredients and gently fold to combine. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, up to overnight.
  • Preheat the oven to 425°F (220°C). Line a 6-cup jumbo muffin tin with paper liners and lightly grease with nonstick spray.
  • In a medium bowl, toss together the remaining ¾ cup diced apples, melted butter, remaining 1 tablespoon flour, and remaining 1½ teaspoons of apple spice blend.
  • Evenly divide the batter between the prepared muffin cups. Top each muffin with some of the apple topping and sprinkle with the demerara sugar.
  • Bake the muffins for 15 minutes, then rotate the muffin tin 180° and bake for 12-15 minutes more, until the muffins are puffed and golden brown and a cake tester inserted into the center comes out clean.
  • Let cool for 15-20 minutes before serving.
  • Enjoy!

Tips for Making the Best Fresh Apple Spice Muffins:

  • Choose the Right Apples: Use a firm, tart apple variety like Granny Smith or Honeycrisp for the best flavor and texture.
  • Don't Overmix the Batter: Overmixing can result in tough muffins. Mix the batter just until the ingredients are combined.
  • Use Fresh Spices: Freshly ground spices will give your muffins the best flavor. If you don't have fresh spices, use ground spices but increase the amount by half.
  • Don't Overfill the Muffin Cups: Fill the muffin cups about 2/3 full to prevent overflowing.
  • Bake the Muffins at the Right Temperature: Bake the muffins at 375°F for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
