Fresh Cranberry Apple Salsa
1 package (12 ounces) fresh or frozen cranberries, thawed, rinsed and drained
2 medium Granny Smith apples, cored, cut into large chunks (I leave them unpeeled)
1/2 large sweet red pepper, seeded and cut into large chunks
1/2 small red onion, cut into large chunks
1/4 cup fresh cilantro leaves
1 jalapeno pepper, seeded and cut into strips
1/2 cup sugar
1/3 cup unsweetened applesauce
1 tsp grated lime peel
Juice of one lime
1/2 tsp each sea salt and freshly ground black pepper

Steps:

  • Combine all the ingredients in container of a large food processor or blender fitted with a metal blade. Cover and pulse until coarsely chopped.
  • Refrigerate for at least an hour to give the flavors a chance to blend. It works well to make it ahead. It can be refrigerated for up to a week.

Fresh salsa is great but it is also nice to be able to can all that fresh goodness from the garden to eat in the dead of winter. Being from Wisconsin, I just had to come up with a recipe using cranberries and this is what I came up with. I use a mixture of hot peppers and seed some but not all of them since I like things hot. I also measure the cranberries, then give them a rough chop in my food processor before adding them. I think I will add some fresh lime juice to my next batch for a little flavor boost.

3 cups tomatoes, peeled, seeded and diced
2 cups onions, diced
1 cup hot pepper, seeded and diced
1 1/2 cups cider vinegar
1 cup water
1 tablespoon canning salt
1 1/2 cups sugar
10 cups fresh cranberries

  • 1. Wash and rinse 6 pint canning jars and keep hot until ready to use. Prepare lids according to manufacturer's instructions.

2 tart apples, peeled and cored
1 small onion, finely diced
A handful of cilantro, roughly chopped
1 red chili or jalapeño pepper, seeded and minced, seeds reserved
1 poblano pepper, seeded and minced
2 tablespoons minced ginger
1 tablespoon sugar or apple-cider syrup (see note)
Salt
1/2 cup chopped walnuts, toasted

1 cup coarsely chopped cranberries (fresh or frozen)
1/4 cup dried cranberries
1/4 cup chopped red onion
2 tablespoons chopped fresh parsley
1 -2 tablespoon liquid honey
1 tablespoon red wine vinegar
1 tablespoon lemon juice
2 teaspoons granulated sugar
1/4 teaspoon pickling salt
1/4 teaspoon hot pepper flakes

Steps:

  • Combine all ingredients in a non-reactive medium saucepan, bring to a boil. Reduce heat, simmer, uncovered, for 10 minutes or until thickened, stirring frequently.
  • Ladle salsa into hot half-pint jars, leaving 1/2 inch headspace.
