3 peels and cores from red apples - seeds removed
5 cups water
¼ cup white sugar

Steps:

  • Place the peelings and cores into a saucepan, and stir in the water. 3 lb beefsteak tomatoes, quartered
1 small fennel bulb (sometimes called anise; 1/2 lb), stalks cut off and discarded, reserving fronds, and bulb chopped
2 celery ribs with leaves, chopped
1 cup loosely packed fresh flat-leaf parsley sprigs, chopped
2 teaspoons fine sea salt, or to taste
Special Equipment
3 (20-inch) squares of cheesecloth

Steps:

  • Finely chop all ingredients in batches in a food processor, transferring to a large bowl. Let stand at room temperature, loosely covered, 1 1/2 hours.
  • Line a large sieve with layered cheesecloth squares and set over a large nonreactive pot. Carefully pour tomato mixture into center of cheesecloth, then gather up edges of cheesecloth to form a large sack and, working over sieve, squeeze solids to extract as much juice as possible. Discard solids.
  • Chill juice until cold, about 1 hour, and stir before serving. (Juice will be pale in color but flavorful.)

4 c fresh cranberries (about 2 bags)
1 Tbsp fresh lemon juice
2 c water (use distilled or spring water for purity)
1 c granulated sugar
**OR, FOR SUGAR-FREE, USE ONE OF THE OPTIONS BELOW**
1 1/4 c stevia-in-the-raw or splenda, **or**
7/8 c light honey, like clover or orange blossom
additional water to taste

Steps:

  • 1. Place the 2 cups of water and lemon juice into a scrupulously clean blender container. Add the 4 cups of cranberries.
  • 2. Blend on medium-high speed for 2-3 minutes. If your blender is very powerful, 2 minutes may be sufficient. I blended mine for the full 3 minutes. You want to arrive at a thick liquid with no solid chunks. Place the lidded blender container in the refrigerator overnight to steep.
  • 3. Remove the container in the morning. Strain the juice through a fine mesh strainer into a medium saucepan. Press to remove all juice. Discard any solid material, or use it to make jam (see my other recipe).
  • 4. Add the sugar (or Stevia, Splenda, or honey) to the juice and heat gently over medium heat just until the sugar or sweetener is dissolved. This will not take long, especially with the calorie-free sweeteners. Do not boil this liquid, just warm it up to aid the dissolving of the sugar.
  • 5. Remove from heat and add 1 cup of cold water. You may add more or less water, depending on your tastes. Less water will yield a sweeter cranberry juice. I used 1 1/2 cups, and it was perfect for me.
  • 6. Transfer the cranberry juice to a drink pitcher, and chill in refrigerator before serving. You can also add ice cubes to speed the chilling process.

4 ounces butter
6 slices calf liver (cut 1/2 inch thick on a slant)

  • Working over a large plate or bowl to catch the juice, remove the peel and pith from 2 of the oranges with a sharp knife, cutting down to the pulp in one operation.
  • Cut out each section from between the membrane and set aside.
  • Reserve the juice and add it to the juice of the third orange.
  • Strain and set aside Heat a large cast iron frying pan,dry, over a medium low heat for a few moments Add 3 oz butter and as soon as it starts to foam add the slices of liver, reduce the heat to minimum and cook very gently for no more than 2 minutes on each side, do not overcook, it must remain soft with no outer crust, and pink inside.
  • Liver continues cooking by its own heat when removed from the pan.
  • Arrange on a heated serving dish and keep hot covered with a plate.
  • Increase the heat to medium, deglaze the pan with the orange juice, incorporating the meat residue by scraping it up with a fork, season with salt and allspice, allow to bubble, then add the orange sections.
  • Tip the pan back and forth allowing the hot juice to flow over the fruit, do this quickly.
  • Remove the sections with a fork and place them around the meat.
  • Remove the pan from the heat, whisk in the remaining 1 oz of butter, cut into small pieces and pour over the liver.
  • Serve right away with small new potatoes, parselied and buttered or with garlic mashed potatoes and green peas.
