PEAR EMPANADAS

Categories     dessert

Yield 16 empanadas

Number Of Ingredients 13

1 1/2 cups dried pears (about 3/4 pound)
2 1/4 cups water
3/4 cup sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
2 cups all purpose flour
1/2 cup lard, cold
2 1/2 tablespoons unsalted butter, cold
1/2 teaspoon salt
About 1/2 cup iced water
1 large egg, beaten, for egg wash
2 cups heavy cream
1/4 cup buttermilk

Steps:

  • In a covered pot, simmer the pears in the water for 30 to 40 minutes, until soft. Drain and reserve the liquid. When pears are cool, place them in a blender with just enough reserved liquid to make a thick puree. Heat 1/2 cup of the leftover pear liquid in a saucepan. Stir in 1/2 cup of the sugar and cook for about 5 minutes, until the sugar begins to caramelize. Add the pear puree, 1/2 teaspoon of the cinnamon and cloves, stirring well. Remove from heat and cool. In a small bowl, combine remaining 1/4 cup sugar and 1/2 teaspoon cinnamon. Set mixture aside.
  • Prepare dough: In a large bowl, combine the flour with the lard, butter and salt. Mix lightly with your fingertips until the dough forms grapesized pieces. You should still be able to see chunks of fat. Stir in the iced water. Lightly knead, handling dough as little as possible, until the dough forms a ball. Add a little more iced water if necessary. Transfer to a plastic bag and shape into a log. Seal the bag, pressing out any air, and chill 1 hour or as long as 3 days. The dough can be frozen for as long as a week. On a lightly floured board, roll out dough to 1/8inch thickness and cut 4inch circles. Brush the edge of each circle with the beaten egg mixture and place 2 tablespoons of the filling in the center. Fold dough over to enclose filling. Seal the edges by pressing the top to bottom with the tines of a fork. Chill for at least 30 minutes before baking. Preheat the oven to 350 degrees. Place empanadas on a baking sheet and brush the tops with the egg wash. Sprinkle with cinnamon sugar. With a sharp knife, cut three small slits in the top of each for steam to escape. Bake for 30 minutes, or until dough is golden. Transfer to a cooling rack to cool slightly and serve warm with crema or blue cheese.
  • Whisk the cream and buttermilk together. Cover and set in a warm place (a gas oven with just the heat from the pilot is fine) for 8 hours. Crema may be kept in the refrigerator as long as a week
  • Yield: 2 cups

Time 2h20m

Yield 15

Number Of Ingredients 12

2 cups all-purpose flour
1 tablespoon white sugar
½ teaspoon salt
1 cup cold butter, cut into 1/2-inch pieces
¼ cup cream cheese
¼ cup sour cream
2 ripe peaches, peeled and cut into 1-inch pieces
3 ½ tablespoons white sugar, divided, or more to taste
1 teaspoon ground cinnamon
½ teaspoon vanilla extract
1 pinch salt
½ egg, beaten, or as needed

Steps:

  • Place flour in a medium bowl. Whisk in sugar and salt. Cut in butter using 2 knives or a pastry cutter. Gently work in cream cheese and sour cream until dough is combined.
  • Turn dough out onto your working surface. Quickly gather crumbs together into a square; fold square in half. Flatten dough out into a larger square using a rolling pin; fold in half again. Roll out one more time and fold into thirds, like a letter. Wrap dough in plastic wrap. Chill until firm, about 1 hour.
  • Mix peaches, 3 tablespoons sugar, and cinnamon in a small bowl. Let sit for about 15 minutes. Transfer filling mixture into a strainer over a bowl to drain the excess juices for 15 minutes, stirring occasionally.
  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Roll pastry dough onto a floured surface to about 3/8-inch thickness. Cut out 15 to 20 circles about 4- to 6-inches in diameter. Place 2 teaspoons of filling into the middle of each circle. Fold dough in half over the filling and seal edges together with your fingers. Press edges together with the tines of a fork to make a decorative seal, if desired.
  • Place empanadas on the prepared baking sheet; brush with egg and sprinkle with remaining sugar.
  • Bake in the preheated oven until golden brown, 12 to 15 minutes. Remove from oven and let cool for 5 minutes before serving.

QUICK AND EASY EMPANADAS

Quick and Easy Empanadas image

This is such a simple recipe w/ just a few ingredients I almost always have on hand. It's a quick dinner w/ a green salad. You can double this easily for make ahead lunches.

Provided by startnover

Categories     Savory Pies

Time 45m

Yield 12-16 empanadas

Number Of Ingredients 8

1 lb ground beef
1 garlic clove
1 teaspoon salt
1 (15 ounce) can fresh cut corn, drained
1/2 cup chopped onion
8 ounces grated cheddar cheese
1 cup salsa
2 (16 ounce) cans large refrigerated biscuits (I use buttermilk, and you may only use 1 and 1/2 cans depending on how full you make them)

Steps:

  • Brown the ground beef in a frying pan adding the salt and pepper just before done.
  • Let the beef cool.
  • In a large bowl mix the corn, onions, cheese, and salsa, then add the cooled beef mixing carefully so not to break up all the cheese.
  • Roll the biscuits out flat to about 2-1/2 times their size.
  • Place approx 1/3 cup filling on one side of the center of the circle lengthwise.
  • Fold the dough over the filling like a turn over and crimp the edges like a pie crust. Be careful not to tear the dough, and to seal the edges completely or your filling will come out! depending on how much filling is used will determine how many biscuits you will use.
  • Place on slightly greased cookie sheet and bake at 375 till lightly browned.

Tips:

  • Select ripe peaches: Choose peaches that are fragrant and have a slight give when you press them gently. Avoid peaches that are too hard or have bruises.
  • Peel the peaches easily: To easily peel the peaches, score a shallow X on the bottom of each peach. Place the peaches in boiling water for about 30 seconds, then transfer them to a bowl of ice water. The skins will slip right off.
  • Sweeten the peaches to your taste: The amount of sugar you add to the peach filling will depend on the sweetness of the peaches. Start with 1/2 cup of sugar and add more to taste.
  • Use a variety of spices: Don't be afraid to experiment with different spices in your empanada filling. Some popular choices include cinnamon, nutmeg, ginger, and cardamom.
  • Chill the dough before baking: Chilling the dough before baking will help to prevent it from shrinking and becoming tough.
  • Bake the empanadas until they are golden brown: The empanadas are done baking when they are golden brown and the filling is bubbling.

Conclusion:

Fresh peach empanadas are a delicious and portable treat that are perfect for any occasion. They are easy to make and can be filled with a variety of fruits and spices. With a little planning, you can even make them ahead of time and freeze them for later.

So next time you are looking for a sweet and satisfying snack, give these fresh peach empanadas a try. You won't be disappointed!
