GRILLED CHEESE WITH TOMATO AND BASIL
These sandwiches were cooked on a grill, but a skillet would work just as well. Choose your favorite kind of cheese. We prefer a variety that melts easily, such as Gouda or Swiss, but cheddar is also good.

GRILLED CHEESE & TOMATO SANDWICH
I started liking grilled cheese & tomato sandwiches years ago at a little restaurant near my office. I would go about three times a week to order a grilled provolone cheese & tomato sandwich. Today I wanted something different, something a little spicier, so I made up the following recipe. I thought it was delicious! Hope you try it and enjoy it!

Steps:
- Prepare barbecue (medium heat). Cut baguette crosswise in half. Cut each half lengthwise in half to form 4 pieces total. Combine oil, garlic, and herbs in small bowl. Brush all cut sides of bread with half of oil mixture.
- Grill bread, cut sides down, until lightly toasted, about 1 minute. Remove from grill. Quickly spread cut sides of toast with goat cheese. Top with tomatoes and olives, dividing equally. Drizzle remaining oil mixture on top.
- Return open-face sandwiches to grill. Cook until bottom sides are toasted, cheese melts, and tomatoes begin to soften, about 3 minutes. Cut each sandwich diagonally in half and serve.
Tips:
- Use ripe, flavorful tomatoes for the best flavor. Campari tomatoes, heirloom tomatoes, or cherry tomatoes will work well.
- Fresh basil is a must for this recipe. If you don't have fresh basil, you can substitute dried basil, but the flavor won't be as good.
- Use a good quality mozzarella cheese. Fresh mozzarella or a creamy mozzarella will melt the best and give you the best flavor.
- Butter the bread before grilling. This will help the bread to brown evenly and give it a nice crispy crust.
- Grill the sandwich over medium heat. This will help to prevent the bread from burning and the cheese from overcooking.
- Serve the sandwich immediately. This will ensure that the cheese is melted and gooey and the bread is still crispy.
Conclusion:
The fresh tomato basil grilled cheese sandwich is a delicious and easy-to-make sandwich that is perfect for a quick lunch or dinner. With just a few simple ingredients, you can create a grilled cheese sandwich that is bursting with flavor. So next time you're looking for a quick and easy meal, give this recipe a try.
