Number Of Ingredients 10

8 ripe plum tomatoes, seeded and diced
2 tbsp finely minced garlic
1/2 cup coarsely chopped fresh basil
1/4 cup finely chopped fresh parsley
1 tbsp fresh lemon juice
1/2 tbsp extra-virgin olive oil
1 tsp finely minced fresh tarragon
1/4 tsp crushed red pepper flakes
2 baguettes, cut in 1/2-inch-thick slices
6 cloves garlic, cut in half

Steps:

  • In a bowl, mix all ingredients except bread and garlic cloves. Add salt and pepper to taste. Set aside, unrefrigerated, 3 hours. Heat oven to 350°F. Toast bread on a baking sheet. Rub cut side of garlic on each slice; top with tomato mixture.

Tips:

  • Use ripe, flavorful tomatoes: The quality of your tomatoes will make or break your bruschetta. Look for tomatoes that are deep red and have a slightly sweet smell.
  • Choose a good quality bread: A sturdy bread that can hold up to the toppings is essential for bruschetta. Ciabatta or baguette are both good choices.
  • Don't skimp on the olive oil: Olive oil is what gives bruschetta its signature flavor. Use a good quality extra virgin olive oil and be generous with it.
  • Add some fresh herbs: Fresh herbs like basil, oregano, or thyme add a burst of flavor to bruschetta. You can also add some minced garlic for extra flavor.
  • Don't overcrowd the bruschetta: When assembling your bruschetta, don't pile on too many toppings. You want to be able to taste all of the flavors, so use a light hand with the toppings.

Conclusion:

Bruschetta is a simple but delicious dish that can be enjoyed as an appetizer, snack, or even a light meal. With its fresh, flavorful ingredients, bruschetta is a surefire way to please everyone at your table. So next time you're looking for a quick and easy recipe, give bruschetta a try. You won't be disappointed.
