Time 1h

Yield 3

Number Of Ingredients 8

1 tablespoon extra-virgin olive oil
½ large red bell pepper, diced
½ red onion, diced
4 cloves garlic, smashed
2 tablespoons tomato paste
2 cups water, or as needed
6 skinless chicken leg quarters, separated into thighs and drumsticks
salt to taste

Steps:

  • Heat olive oil in a pressure cooker over medium heat. Stir in red bell pepper and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Add garlic and cook until golden.
  • Dissolve tomato paste in 1 cup water and pour it into the pressure cooker. Place chicken thighs and drumsticks in the pan so the pieces are evenly spaced. Add enough water so that the chicken is nearly covered.
  • Seal the pressure cooker and bring up to pressure over high heat. Reduce the heat to low, maintaining full pressure; cook for 15 minutes. Turn off the heat and allow the pressure to drop naturally, about 20 minutes. Season chicken with salt to taste.

Chicken Fricassee (Fricassee de Poulet a L'Ancienne) image

Also see our step-by-step photo tutorial for making Chicken Fricassee. A fricassee is halfway between a saute and a stew. A true classic -- with as many variations as there are grandmothers in France -- it relies on humble ingredients and just a single pot. It's the original French comfort food: simmered chicken with hearty vegetables in a rich, silky sauce. And almost as satisfying as the dish itself is having our one-pot master recipe in your repertoire.

Time 1h15m

Number Of Ingredients 18

1 whole chicken (3 1/2 to 4 pounds), cut into 11 pieces (reserve back and wing tips for another use, such as stock)
Coarse salt and freshly ground pepper
3 tablespoons unsalted butter, softened, divided
1 tablespoon extra-virgin olive oil
1 small yellow onion, cut into 1/4-inch dice (1 cup)
1 carrot, cut into 1/4-inch dice (1/2 cup)
1 celery stalk, cut into 1/4-inch dice (1/3 cup)
8 ounces cremini mushrooms, trimmed and quartered
2 tablespoons all-purpose flour
2/3 cup dry white wine
4 cups chicken broth
2 sprigs fresh flat-leaf parsley
2 sprigs fresh thyme
1 bay leaf
2 large egg yolks, room temperature
1/4 cup heavy cream
2 to 3 tablespoons roughly chopped fresh tarragon leaves
2 tablespoons fresh lemon juice

Steps:

  • Brown ChickenSeason chicken on both sides with 1 tablespoon salt and 1/2 teaspoon pepper. Preheat a Dutch oven or other large heavy pot over medium-high heat. Add 2 tablespoons butter and the oil to pot. When butter melts and foam subsides, add half the chicken, skin side down, in a single layer; do not crowd pot. (If butter begins to blacken, lower heat.) Fry chicken, turning once, until golden brown on both sides, about 10 minutes total, and transfer to a plate. Repeat with remaining chicken.
  • Saute MirepoixReduce heat to medium, and add mirepoix (onion, carrot, and celery) to pot, scraping up any browned bits with a wooden spoon. Saute mirepoix, stirring occasionally, until soft and golden brown in places, 8 to 10 minutes.
  • Cook Mushrooms and FlourAdd mushrooms, and cook, stirring occasionally, until mushrooms darken, become glossy, and begin to release liquid, 4 to 5 minutes. Stir in flour, and cook until flour is absorbed by vegetables and is no longer visible, about 1 minute.
  • Pour in Wine and BrothAdd wine to pot, and bring to a boil, stirring until liquid just thickens, about 45 seconds. Add broth, and stir.
  • Simmer ChickenPlace chicken, skin side up, in a single layer on vegetables; pour juices that have accumulated on plate into pot. Tie parsley sprigs, thyme sprigs, and bay leaf together with kitchen twine; add to pot. Bring to a boil, then reduce to a simmer. Cover partially. Cook until internal temperature of thickest part of chicken registers 165 degrees, 25 to 30 minutes. Transfer chicken to a clean plate. Simmer liquid, uncovered, until reduced slightly, about 5 minutes. Discard herbs.
  • Make and Add LiaisonTo make the liaison (sauce thickener), whisk together egg yolks and cream in a medium bowl. Whisking constantly, pour 1/2 cup cooking liquid, 1 tablespoon at a time, into liaison to temper it. Stir tempered liaison into pot.
  • Finish with Tarragon, Lemon, and ButterReturn chicken to pot. Add tarragon, lemon juice, and the remaining butter. Bring to a simmer, stir gently to combine, and serve.

Yield Makes 16 fricos

Number Of Ingredients 3

16 tablespoons finely grated Parmesan or Grana Padano cheese
Special Equipment
A silicone baking mat (such as a Silpat)

Steps:

  • Preheat oven to 375°F. Line a large rimmed baking sheet with silicone mat.
  • Working in 2 batches, scoop 8 mounds of finely grated Parmesan or Grana Padano cheese (1 tablespoon per mound) onto mat, spreading each mound about 3" wide and spacing at least 1" apart.
  • Bake cheese until light brown and melted, 5-6 minutes (check occasionally while baking so it won't turn too brown). Remove sheet from oven and let frico cool completely. (To shape frico, leave baking sheet in oven with door open; use a small offset spatula to remove frico one at a time, working quickly to shape. To form tuile-like shapes, gently roll warm frico around the handle of a wooden spoon. To form cups, press onto the bottom and up the sides of a mini muffin pan. Keep frico warm until ready to mold; it hardens quickly as it cools.)

CHICKEN FRICASSéE (FRENCH CREAMY CHICKEN STEW)

Chicken Fricassée (French creamy chicken stew) image

Recipe video above. A traditional French dish, this is essentially a quick chicken stew with a creamy white mushroom sauce. It's a bit like a white sauce version of the famous French Coq au Vin - but it's much faster to make! This is a wonderful rustic family meal that's quick enough for midweek, or to elevate to restaurant level by using homemade chicken stock.

Provided by Nagi

Categories     Main     Main Course

Number Of Ingredients 17

4 chicken drumsticks ((~150g/5oz each, Note 1))
4 chicken thighs (, skin-on and bone-in (~250g/8oz each, Note 1))
1 tsp salt ((cooking / kosher salt))
1/2 tsp black pepper
4 tbsp / 60g unsalted butter
300g / 10oz white mushrooms (, halved if small, or cut in 4 to 6 if large)
2 medium brown onions (, sliced 0.6cm (1/2in) wide)
2 garlic cloves (, finely minced)
1 bay leaf (, fresh (sub dried))
3 thyme sprigs ((or 1/2 tsp dried thyme))
3 tbsp flour (, plain / all-purpose)
1/2 cup white wine (, preferably chardonnay (Note 2))
3 cups chicken stock (, low sodium (preferably homemade!))
1/4 tsp salt ((cooking / kosher salt))
1/4 tsp black pepper
2 tbsp parsley (, chopped)
2/3 cup thickened/heavy cream

Steps:

  • Season chicken: Pat chicken dry with paper towels then sprinkle with salt and pepper.
  • Brown thighs: Melt butter over medium-high heat in a large skillet or heavy based pot with a lid. Add chicken thighs, skin side down, and cook for 4 to 5 minutes until golden brown. Turn and cook the other side for 1 minute then remove to a plate.
  • Brown drumsticks: Then brown the drumsticks, as best you can. I do 3 sides, about 2 minutes each. Then remove from skillet.
  • Sauté mushrooms and onion: Add mushrooms, onion, bay leave and thyme. Cook for 5 minutes until mushroom is lightly golden - they won't go deep golden brown.
  • Garlic and flour: Add garlic and stir for 30 seconds. Add flour and cook for 1 minute.
  • Wine and chicken stock: Add wine and chicken stock. Stir, scraping the base of the pot to dissolve the brown residue stuck to the pan ("fond") into the sauce.
  • Return chicken to sauce: Return chicken back into the sauce with the skin side up.
  • Simmer covered 10 minutes: Once it comes to a simmer, adjust heat so it's bubbling constantly but not rapidly (see video) - medium-low on my stove. Cover with lid and simmer 10 minutes.
  • Uncover 20 minutes: Remove lid and let it simmer for a further 20 minutes. Chicken will be cooked - internal temperature 75°C/167°F or slightly higher.
  • Creamy sauce: Remove chicken to a plate. Add cream and stir. Once it comes up to a simmer, taste sauce (I know, big ask!), and add more salt if desired..
  • Serve! Return chicken into the sauce then remove from the stove. Sprinkle with parsley and serve! Traditionally served over mashed potato or rice. Also ideal with short pasta like penne, ziti or macaroni.

Tips:

  • Choose the right chicken pieces: For a classic fricassee, use a whole chicken cut into 8 pieces, or boneless, skinless chicken breasts or thighs. If you're using bone-in chicken, browning the pieces before simmering will add extra flavor.
  • Use a variety of vegetables: The most common vegetables used in fricassee are carrots, celery, and onions, but you can also add other vegetables like potatoes, peas, green beans, or mushrooms. Frozen vegetables can be used in place of fresh vegetables, if desired.
  • Season the fricassee well: Use a combination of salt, pepper, garlic, thyme, and bay leaves to season the fricassee. You can also add other herbs and spices to taste, such as rosemary, sage, or paprika.
  • Simmer the fricassee until the chicken is cooked through: This will usually take about 30 minutes for boneless, skinless chicken breasts or thighs, and 45 minutes for bone-in chicken.
  • Thicken the sauce, if desired: If you want a thicker sauce, you can add a cornstarch or flour slurry to the fricassee. To make a cornstarch slurry, mix 1 tablespoon of cornstarch with 2 tablespoons of water until smooth. To make a flour slurry, mix 1 tablespoon of flour with 2 tablespoons of water until smooth.
  • Serve the fricassee over rice, noodles, or mashed potatoes: Fricassee is a versatile dish that can be served with a variety of side dishes.
