FISH FILLETS WITH BROWN BUTTER (PAN-FRIED)

Fish Fillets With Brown Butter (Pan-Fried) image

This fish dinner tastes indulgent, but it's easy to prepare and not as heavy as it sounds. Cod has a mild, non-fishy taste. Even a picky eater will love this. The light cod is pan-fried until crispy. We loved the brown butter sauce that's poured over the cod. It's slightly nutty and has a hint of lemon. We will definitely be...

2 fish fillets (I like white fish for this recipe like cod but any fish would work)
4 Tbsp butter
2 Tbsp olive oil (sunflower or canola oil)
1/2 c all-purpose flour
salt and pepper
2 Tbsp lemon juice
thyme or oregano (I prefer dried)

Steps:

  • 1. Season fish on both sides with salt and pepper.
  • 2. Lightly dredge fish in flour and shake off excess. (I like to season the flour with salt and pepper as well.)
  • 3. When pan is hot, add olive oil followed immediately by 1-2 tablespoons butter.
  • 4. When butter is melted, place fish in the pan and jiggle pan for the first 10 seconds to keep the fish from sticking.
  • 5. Cook until golden crust forms on meat.
  • 6. Carefully turn fish on the other side and again jiggle pan for the first few seconds.
  • 7. Cook until skin turns golden brown.
  • 8. Remove to a warm plate.
  • 9. Pour out the cooking fat from the pan. Then put the remaining 2 tablespoons of butter.
  • 10. Melt them until they become hazel color.
  • 11. Turn off the heat. Add the lemon juice and few leaves of thyme or oregano. (you can leave the herbs out)
  • 12. Pour the brown butter sauce over the fish fillets and serve.
  • 13. *Make sure you pat dry the fillets before working with them. *The cooking time of the fish depends on the thickness of the fillets. *It's better not to cover the fish while frying them so they won't become soggy from the trapped steam.

Categories     Fish     Ginger     Fry     Gourmet

Yield Serves 4

Number Of Ingredients 11

1/3 cup soy sauce
2 tablespoons white-wine vinegar
1 1/2 tablespoons minced peeled fresh gingerroot
1 teaspoon sugar
four 6- to 8-ounce skinless flounder or orange roughy fillets
cornstarch for dredging the fish
2 large eggs
1/2 teaspoon salt
1 1/3 cups fresh bread crumbs
1/4 cup sesame seeds
vegetable oil for frying the fish

Steps:

  • In a small saucepan combine the soy sauce, the vinegar, the gingerroot, the sugar, and pepper to taste and heat the mixture over low heat while preparing the fish. Pat the fish dry and season it with salt and pepper. Have ready in separate shallow dishes the cornstarch, the eggs beaten with the salt, and the bread crumbs combined with the sesame seeds. Dredge each fillet in the cornstarch, coating it thoroughly and shaking off the excess, dip it in the egg mixture, letting the excess drip off, and dredge it in the bread crumb mixture, pressing the mixture to help it adhere.
  • In a skillet large enough to hold 2 of the fillets comfortably heat 1/4 inch of the oil over moderately high heat until it just begins to smoke, in it fry the fillets, 2 at a time, reheating the oil between batches, for 45 seconds to 1 minute on each side, or until they are golden brown, and transfer them to paper towels to drain. Transfer the fillets to 4 heated plates, bring the soy sauce mixture to a boil, and spoon it over the fish.

2 unripe bananas
2 tablespoons unsalted butter
1 tablespoon vegetable oil
two 6- to-8 ounce skinless flounder or orange roughy fillets
1/2 teaspoon ground cumin
1 large egg
1/4 teaspoon salt
2/3 cup finely chopped unsalted peanuts
4 teaspoons fresh lime juice plus lime wedges as an accompaniment

Steps:

  • Peel the bananas and cut them lengthwise into 1/4-inch-thick slices. In a large ovenproof skillet heat 1 tablespoon of the butter and the oil over moderately high heat until the foam subsides, in the fat sauté the banana slices for 1 minute on each side, or until they are golden, and transfer them with a spatula to a plate. Pat the fish dry and sprinkle it with the cumin and salt and pepper to taste. Have ready in separate shallow dishes the egg beaten with the salt and the peanuts. Dip each fillet in the egg mixture, letting the excess drip off, and dredge it in the peanuts. To the skillet add the remaining 1 tablespoon butter, heat it over moderately high heat until the foam subsides, and in it sauté the fillets for 3 minutes. Turn the fillets, top them with the banana slices, and sauté them for 2 minutes more. FRIED FISH FILLETS (CATFISH, SWAI, FLOUNDER, ETC)

FRIED FISH FILLETS (Catfish, Swai, Flounder, etc) image

You can fry any fish this way. Our favorites in particular are catfish, swai and speckled trout. I saw this concept on one of the cooking shows but cannot remember which one. This also would work with fried chicken or pork chops.

Categories     Fish

Number Of Ingredients 8

favorite fish fillets
buttermilk
sour cream
salt (for marinating and batter)
black pepper (for marinating and batter)
paprika (for marinating and batter)
flour
canola oil or shortening

Steps:

  • 1. Wash fish fillets and set aside. My pic is swai this time. We also love catfish and speckled trout this way.
  • 2. Mix together buttermilk and half that amount of sour cream. For instance if you are using 1 cup buttermilk then use 1/2 cup sour cream. This amount depends on how many fish fillets you are using so use your own judgement. Mix in salt, pepper and paprika and whisk until well combined.
  • 3. Place fish fillets in a bowl with lid or ziplock bag and pour in the buttermilk mixture and refrigerate for at least one hour or up to several hours, turning the bag (or bowl) occasionally.
  • 4. To fry: Put two plastic grocery bags together and put in the flour, salt, pepper and paprika. Combine together by gently moving the bag back and forth. Again use your judgement as far as the amount, which depends on how many filets you're frying. Add in the fish fillets. Securely close up bag by twisting top then gently shake the bag until fillets are well coated.
  • 5. Take out fillets and shake off excess flour and place onto a cookie sheet. Get out skillet and heat up the oil or shortening you'll be frying them in.
  • 6. Place in hot oil or shortening and fry to a golden brown or to your likeness. Be careful not to over cook.
  • 7. Serve with tartar sauce, lemon wedges, vinegar or just plain. As sides we enjoy boiled or baked potatoes, slaw and hushpuppies.

Tips:

  • Use the right type of fish: Firm-fleshed fish like cod, haddock, or tilapia are best for frying.
  • Cut the fish into even-sized pieces: This will help them cook evenly.
  • Season the fish before frying: This will add flavor and help the fish crisp up.
  • Use a hot pan and plenty of oil: This will help the fish cook quickly and evenly.
  • Don't overcrowd the pan: This will lower the temperature of the oil and make the fish soggy.
  • Fry the fish in batches if necessary: This will help prevent overcrowding and ensure that the fish cooks evenly.
  • Use a wire rack to drain the fish after frying: This will help remove excess oil.
  • Serve the fish immediately with your favorite sides: Fried fish is best when served hot.

Conclusion:

Fried fish fillets are a delicious and versatile dish that can be enjoyed by people of all ages. With the right ingredients and a little bit of practice, you can easily make fried fish fillets at home that are just as good as, if not better than, the ones you get at a restaurant. So next time you're looking for a quick and easy meal, give fried fish fillets a try.
