Time 40m

Number Of Ingredients 7

3 c all purpose flour
1 tsp salt
3/4 c crisco (cold)
1 egg, beaten
1/4 c ice water
1 tsp white vinegar
cinnamon and sugar mixture

Steps:

  • 1. In a large bowl, combine flour and salt. Cut in crisco with a pastry knife until it resembles coarse crumbs.
  • 2. Combine beaten egg and ice water. Sprinkle over flour. Add in white vinegar. Mix until it all comes together to form a ball. Add more water if its looks too dry. Wrap in plastic wrap and refrigerate for 30 minutes.
  • 3. Roll out dough into 6 inch rounds. Fill with favorite fruit filling, wet edges with a little water, fold over and crimp together with a fork.
  • 4. Deep fry for 2-4 minutes until golden brown. Sprinkle with cinnamon and sugar.

Tips:

  • Choose the Right Fat: Lard or vegetable shortening work best for fried pies, as they give the pastry a flaky, tender texture. Butter can also be used, but it may make the pastry more greasy.
  • Work the Dough Quickly: Overworking the dough will make it tough. Work it just enough to bring it together, then chill it for at least 30 minutes before rolling it out.
  • Roll the Dough Thin: The thinner the dough, the flakier the pastry will be. Roll it out to a thickness of about 1/8 inch.
  • Use a Generous Amount of Filling: Don't be stingy with the filling! A good rule of thumb is to use about 1/2 cup of filling per pie.
  • Seal the Pies Well: Make sure the edges of the pies are sealed well, so that the filling doesn't leak out during frying.
  • Fry the Pies in Hot Oil: The oil should be hot enough so that the pies sizzle when they are added to the pan. This will help to create a crispy crust.
  • Drain the Pies on Paper Towels: After frying, drain the pies on paper towels to remove any excess oil.

Conclusion:

Fried pies are a delicious and versatile treat that can be enjoyed for breakfast, lunch, or dinner. With a variety of fillings to choose from, there's sure to be a fried pie that everyone will love. So next time you're looking for a quick and easy meal, give fried pies a try!
