Categories     Pork

Number Of Ingredients 11

2 1/2 lb. fresh pork loin
12 garlic cloves, peeled and crushed
1 large onion chopped
1/2 cup sour orange juice (or 1/4 cup orange & 1/4 cup lime juice)
2 cups water
1 cup pure olive oil
1/2 teaspoon salt
1/2 fresh onion sliced into rings
lime wedges
1 teaspoon oregano
1 teaspoon cumin

Steps:

  • Cut pork into 2" chunks. To prepare marinade: mix together garlic, chopped onion, orange juice, 1/2 cup olive oil, oregano, cumin and salt. Pour over pork chunks and marinate for at least 3 hours or overnight in the refrigerator. Remove meat from marinade. Place in pot with two cups of water and 1/2 cup olive oil. Simmer, uncovered until all water boils away, 30-45 minutes. Brown the pork in the oil until crispy on the outside. DO NOT overcook! Add onion slices and saute briefly.

Tips for Making the Best Masas de Puerco Fritas:

  • Choose the right cut of pork: Pork shoulder or pork loin are both good choices for this dish. Pork shoulder has more fat, which will make the meat more tender, while pork loin is leaner and will cook more quickly.
  • Marinate the pork: Marinating the pork in a mixture of spices and herbs will help to flavor the meat and make it more tender. You can use a simple marinade made with garlic, oregano, cumin, and olive oil, or you can try a more complex marinade that includes ingredients like sour orange juice, annatto seeds, and bay leaves.
  • Cook the pork slowly: Masas de puerco fritas are traditionally cooked over low heat for a long period of time. This allows the meat to become very tender and flavorful. You can cook the pork in a Dutch oven or in a crock pot.
  • Fry the pork until crispy: Once the pork is cooked, it is traditionally fried until crispy. This can be done in a large skillet or in a deep fryer. Be careful not to overcrowd the pan, or the pork will not fry evenly.

Conclusion:

Masas de puerco fritas are a delicious and traditional Cuban dish that is perfect for any occasion. With a little planning and effort, you can easily make this dish at home. So next time you are looking for a new and exciting recipe to try, give masas de puerco fritas a try. You won't be disappointed!
