1 tablespoon canola oil
1/2 teaspoon coarse black pepper
1/4 teaspoon kosher salt
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
2 -3 cloves garlic, minced

Steps:

  • Cut the potatoes into thin wedges.
  • Pile them in a bowl and cover them with cold water.
  • Let rest 15 minutes.
  • Preheat oven to 375 degrees F.
  • Coat a baking sheet with vegetable spray.
  • Set aside.
  • Drain the potatoes and dry them with paper towels.
  • Press the potatoes with paper towels to remove all water.
  • Transfer the potatoes to a large bowl.
  • Sprinkle the potatoes with oil, tossing the potatoes to disburse it.
  • Then sprinkle with pepper, salt, paprika and cayenne pepper.
  • Bake the potatoes at 375 degrees F for 20 minutes.
  • Turn over the potatoes.
  • Sprinkle potatoes with garlic and continue cooking for another 15-20 minutes or until crisp and brown.
  • Serve immediately.

Most of my experiments aren't worth saving, but I actually want to remember what I did this time so am posting the recipe for the brown sugar caramelized sweet potatoes that I made. This recipe is perfect for cooking for 1-2, and only takes a few minutes. I used some very skinny home grown sweet potatoes I picked up at a Farmer's Market and recommend you use potatoes that will slice into small discs rather than huge ones.

1 tablespoon butter
2 small sweet potatoes (do not peel)
1/8 teaspoon salt
2 tablespoons brown sugar
1 teaspoon cinnamon (optional)

Steps:

  • Slice the sweet potatoes thinly, approximately 1/4-1/2 inch thick.
  • Melt butter in a large hot frying pan over medium-high heat, then places slices in the pan in a single layer. Sprinkle with salt.
  • Fry the potatoes until lightly browned on one side, then flip over each slice. You'll need to watch them carefully and move the slices in the hottest part of the pan to the edges so that they all get browned. Adjust the heat down to medium if needed to keep them from browning too quickly. Total browning time took me about 5-7 minutes.
  • When both sides are lightly browned, sprinkle brown sugar and cinnamon across the top. Wait 1-2 minutes and then toss the potatoes until the brown sugar is caramelized (approx 1 more minute).
  • Remove from pan and serve immediately.

1 1/2 pounds sweet potatoes, peeled and cut into 1- to 2-inch chunks
3 tablespoons peanut oil

  • Put scallions in food processor and pulse until finely chopped; remove. Add garlic, ginger and chili to the processor and pulse until minced; remove. Fit the processor with grating blade and grate sweet potatoes.

6 medium firm, sweet potatoes
3/4 c white sugar
1/2 c water
5 Tbsp butter, room temperature
1/2 tsp vanilla extract

Steps:

  • 1. Scrub, wash and peel potatoes, place in large bowl and cut into 1/2 inch slices across. Set aside.
  • 2. Spray a large, heavy skillet with a non stick cooking spray. Add slices of potatoes and the 3/4 cup of water.
  • 3. Bring to boil on Medium high, cap with the lid and turn burner down to low. Check occasionally about every 10 to 15 minutes, DO NOT STIR. May gently slide with a wooden spoon always replacing lid. When potatoes are tender, about 20 minutes or so, gently check with a fork. Add, butter, sugar and vanilla. About 1/2 cup of liquid should still remain in pan with potatoes. Recap with lid and simmer until sugar is melted, and butter and vanilla are incorporated with drippings.
  • 4. The drippings should thicken allowing you to turn potatoes gently with a spatula, don't let them stick. When Juice is thick and cooked real low, remove from burner. Leave lid on potatoes for a few more minutes to allow more steaming. The potato slices should have taken on a candied appearance.

  • 1. Peel sweet potatoes, cut into quarters or a little smaller if potato is large. Place in a saucepan and cover with water. Boil just until the potatoes begin to soften.
