FRITO CORN SALAD RECIPE - (4.4/5)

Frito Corn Salad Recipe - (4.4/5) image

Provided by Tricia33

Number Of Ingredients 9

1 (12 oz.) bag frozen corn kernels, thawed (see notes below)
2 cups grated cheddar cheese
1 green pepper, diced
1/2 cup red onion, finely diced
1 cup mayonnaise
1 tbsp. Taco Seasoning
1 (10 1/4 oz.) bag Fritos (regular or chili cheese), crushed
pepper, to taste
Note: I like to use the frozen corn that has been thawed because I think it has more of a fresh corn taste. But 2 cans of well-drained corn will work with this too.

Steps:

  • In a large bowl, combine thawed corn, cheese, diced bell pepper and onions. Stir well. Then add in mayonnaise and taco seasoning. Stir until thoroughly combined. I like to season it with a little bit of pepper too (this is optional). Then just before serving, stir in crushed Fritos so they stay nice and crunchy. Some folks put in half the crushed Fritos at the time they make it, then add the other half in right before serving. I always think it looks pretty when you have a few crushed ones on top when you serve it. Note: Go with what is easiest for you when making this. Using pre-shredded cheese in a bag works just fine. And if you don't have time to thaw out a bag of corn, then use 2 (15 oz.) cans of corn that are drained really well. Also, for a big bump in flavor, try using the chili cheese or BBQ flavored Fritos.

FRITO CHILI SALAD

Frito Chili Salad image

A hundred years ago when I first moved into my own place, I went grocery shopping for the first time. I found 2 add hamburger meals, they were not hamburger helper but like them, one was in a green box and was taco casserole, and another was in a fuchsia box and was enchilada casserole, no clue what brand but I loved them. Didn't...

Categories     Salads

Time 1h5m

Number Of Ingredients 17

1 lb ground beef
1 small onion diced
1 tsp pureed garlic
8 oz tomato sauce
1/2 c tomato juice
1-2 Tbsp chili powder
1/2-1 tsp ground cumin
1/4 tsp oregano
1 can(s) kidney or black or pinto beans drained and rinsed
8 oz fritos or tortilla chips
shredded lettuce
diced tomato
sliced green onions
sliced radishes
grated cheese
salsa
sour cream

Steps:

  • 1. Preheat oven to 350. Grease 2 quart casserole. brown meat, then add onion and garlic. Drain. Add tomato sauce, tomato juice, seasonings. Stir in beans. Put meat in a casserole dish, then top with grated cheese and top with fritos. Cover and bake for 40 minutes
  • 2. In the meantime make salad out of lettuce, onion, and tomato. Serve frito chili on bed of salad and add grated cheese and serve with salsa and sour cream.
  • 3. Note: Notes: I use 2 tablespoons chili powder and 1 teaspoon cumin cause I like that fullness of the earthy flavors. If you would like to add some heat, then a couple of slices of diced jalapeno will do the trick. The kids do not eat salad so I just serve it to them as a casserole. For the adults I have some salad bowls that fit the bill and I put some sald in each one then top with the frito chili salad. I also love tortilla chips so I use those instead of fritos. I also like pinto beans a whole lot better than kidney beans so I use those instead.

Tips:

  • Fresh and Crispy Ingredients: Always use fresh, crisp vegetables for the best flavor and texture. Wilted or soggy veggies will not hold up well in the salad.
  • Homemade Dressing: If you have the time, making your own dressing from scratch is always a great option. It allows you to control the ingredients and flavors, and you can customize it to your liking.
  • Cheese and Toppings: Use high-quality cheese and toppings to elevate the flavor of the salad. Shred your own cheese for the best texture and flavor.
  • Keep it Simple: Don't overcrowd the salad with too many ingredients. A few key ingredients, combined well, will create a delicious and satisfying salad.
  • Make it a Meal: Frito salad can be a meal on its own or served as a side dish. Add some grilled chicken, shrimp, or tofu for a protein boost.

Conclusion:

Frito salad is a classic American dish that is easy to make and always a crowd-pleaser. With its crunchy texture, creamy dressing, and flavorful toppings, it's a dish that everyone will enjoy. Whether you're making it for a potluck, picnic, or just a weeknight dinner, Frito salad is sure to be a hit. So grab a bag of Fritos, gather your favorite toppings, and enjoy this delicious and versatile dish!
