PINK LEMONADE CUPCAKES

Pink Lemonade Cupcakes image

These cupcakes are absolutely darling. I found the recipe in a cupcake cookbook a couple of years ago. They are perfect for little girl birthday parties (and even older girl birthday parties as my adult friends also love them!). They are tangy and sweet and not too dense. I often make bite-size ones in my mini cupcake pan. Reduce the baking time if making minis or they will dry out.

  • Bake the cupcakes for the amount of time specified in the recipe, or until a toothpick inserted into the center comes out clean.
  • Allow the cupcakes to cool completely before frosting them.
  • For a smooth and creamy frosting, beat the butter and cream cheese together until they are light and fluffy.
  • Gradually add the powdered sugar to the frosting, beating until it is smooth and creamy.
  • Add a few drops of lemon extract to the frosting for a delicious citrus flavor.
  • Pipe the frosting onto the cupcakes using a pastry bag fitted with a star tip.
