12 fresh mint leaves, plus more for garnish
1 cup ice
3 ounces light rum (6 tablespoons)
¼ cup fresh lime juice (from 2 limes), plus wedges for garnish
3 dashes Angostura bitters

Steps:

  • Arrange watermelon evenly on a baking sheet lined with parchment paper. Freeze until completely frozen, at least 2 hours or up to 12 hours.
  • Bring water and sugar to a simmer in a small saucepan over medium heat. Simmer, stirring occasionally, until the sugar has dissolved, about 2 minutes. Remove from heat and stir in mint. Let stand at room temperature, uncovered, for about 30 minutes. Pour the syrup through a fine-mesh strainer into a small airtight container. 1/2 cup sugar
1/2 cup water
5 cups watermelon, seeds removed
2 tablespoons lemon juice
1 1/4 cups vodka
2 ounces melon liqueur, optional
8 lemon twists, for garnish

Steps:

  • Bring the sugar and water to a boil in a small saucepan and cook until the sugar has completely dissolved. Let cool.
  • In a food processor, puree the watermelon flesh. Add a little of the sugar syrup to sweeten, to taste. Pour the pureed watermelon into 2 empty ice cube trays and freeze for at least 4 hours.

125ml tequila
75ml triple sec
2 limes, zested and juiced, plus a wedge for the rim
2 tsp honey
4 tsp sea salt flakes
2 tsp caster sugar
¼ tsp chilli flakes

  • Put the watermelon pieces in a freezerproof container and freeze overnight until solid. The next day, prepare the garnish for the rim of each glass. Combine the sea salt flakes, sugar, chilli flakes and lime zest in a small bowl. Set aside.
