### Tips
  • Choose the right rice. Short-grain or medium-grain rice, such as sushi rice or arborio rice, is best for fruit and rice salad because it holds its shape well and doesn't get too mushy.
  • Cook the rice properly. Be sure to rinse the rice before cooking to remove the starch. Cook the rice according to the package directions, but reduce the cooking time by a few minutes so that the rice is slightly al dente.
  • Let the rice cool completely before adding the fruit. This will prevent the fruit from making the rice soggy.
  • Use fresh, ripe fruit. The better the quality of the fruit, the better the salad will be.
  • Choose fruits that will hold their shape well in the salad. Avoid fruits that are too soft or delicate, such as berries or bananas.
  • Add some herbs or spices to the salad for extra flavor. Fresh basil, mint, or cilantro are all good choices.
  • Dress the salad with a simple vinaigrette or lemon-herb dressing. A heavy dressing will weigh down the salad and make it less refreshing.
  • Serve the salad chilled. Fruit and rice salad is best enjoyed cold.
