GRANDMA'S CRANBERRY-ORANGE GELATIN SALAD
My grandmother made this salad every Thanksgiving. It is delicious even without its creamy topping. This side dish is so yummy, I sometimes make it even when it's not Thanksgiving! Depending on your salad's shape, you can spread the topping in a layer over the Jell-O; or if you use a ring mold, put the topping in the center. Alternately, you could serve the topping in a bowl on the side, so it's optional.

HOLIDAY CRANBERRY FRUIT SALAD
We enjoy this during Thanksgiving and Christmas. Traditionally this is made with cherry Jell-O, however, to be a bit healthier I now make it with "no sugar added" fruit juice. Feel free to substitute cherry gelatin and water (made to package directions) in place of the unflavored gelatin and fruit juice. While many enjoy the addition of pecans, I omit due to personal preference. If you have young children, I recommend peeling the apple. If using an unpeeled apple, use a red apple for the best color.

Tips:
- Use fresh cranberries: Fresh cranberries have a brighter flavor and more nutrients than frozen cranberries. If you can't find fresh cranberries, you can use frozen cranberries, but be sure to thaw them before using.
- Choose a flavorful gelatin: The gelatin is the base of the salad, so it's important to choose one that has a good flavor. A plain, unflavored gelatin will work, but you can also use a flavored gelatin, such as lemon, orange, or cherry.
- Add some other fruits: Cranberries are the star of the show in this salad, but you can add other fruits to bulk it up and add some extra flavor. Some good options include apples, grapes, oranges, and pineapple.
- Don't overmix the salad: Once you've added all of the ingredients, be careful not to overmix the salad. Overmixing will make the gelatin tough and rubbery.
- Chill the salad before serving: The salad needs to be chilled for at least 4 hours before serving. This will allow the gelatin to set and the flavors to meld.
Conclusion:
This fruited cranberry gelatin salad is a delicious and refreshing dessert that is perfect for any occasion. It's easy to make and can be made ahead of time, making it a great option for busy weeknights. The combination of cranberries, other fruits, and gelatin is a winning one, and the salad is sure to be a hit with everyone who tries it.
