This is my husband's favorite recipe. Someone brought this to my Grandpa's funeral in 1968, and I've been making it since. The dark fudge cake over the hot pudding is delicious served with whipped cream or ice cream. This is very rich and will be loved by chocolate lovers!

2 teaspoons baking powder
¾ cup white sugar
2 tablespoons unsweetened cocoa powder

½ cup milk
2 tablespoons butter, melted

¼ cup unsweetened cocoa powder
1 cup packed brown sugar
1 ¾ cups hot water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 9x9-inch baking pan.
  • Whisk together flour, baking powder, white sugar, 2 tablespoon cocoa powder, and salt in a large bowl.
  • Stir in milk and butter until smooth.
  • Fold in walnuts until just combined.
  • Spread batter evenly in the prepared baking pan.
  • Mix 1/4 cup cocoa and brown sugar in a small bowl; sprinkle mixture on top of the batter.
  • Pour hot water over the batter.

2 teaspoons baking soda
½ teaspoon salt
½ cup butter
2 ½ cups packed brown sugar
3 eggs

3 (1 ounce) squares unsweetened chocolate, melted
1 cup sour cream
1 cup boiling water
½ cup butter
1 cup packed brown sugar
¼ cup milk
1 ¾ cups confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Sift together the flour, baking soda and salt. Set aside.
  • In a large bowl, beat 1/2 cup butter or margarine and 2 1/2 cups brown sugar until well mixed. Add eggs one at a time. Beat in the vanilla and melted chocolate squares. Add 1/2 the sour cream and then 1/2 the dry ingredients to the butter mixture until well blended.
  • Add the remaining sour cream and dry ingredients to the batter. Stir in boiling water.

  • To Make Caramel Icing: First melt 1/2 cup butter in a saucepan. Stir in 1 cup brown sugar and boil about 2 minutes. Stir in 1/4 cup milk and bring to a boil. Place pan in cold water and stir in the confectioners' sugar. Continue stirring until smooth. Spread over still warm cake.

  • Preheat the oven to 350 degrees. Butter and flour a 12 by 18 by 1 1/2-inch sheet pan and set aside.
  • In a medium bowl, sift together the flour, cocoa, baking soda, and salt.
  • In the bowl of an electric mixer fitted with a paddle attachment, cream the butter and sugars on high speed until light, approximately 5 minutes. Add the eggs, one at a time, and the vanilla and mix well. Combine the buttermilk, sour cream, and coffee. In the bowl of an electric mixer fitted with the whisk attachment, whisk the chocolate mixture and softened butter on medium speed for a few minutes, until it's thickened.

  • For the fudge icing:
  • 6 ounces bittersweet chocolate, minimum 70 percent cocoa solids
  • 1 cup plus 2 tablespoons unsalted butter, softened

  • For the cake:
  • Preheat the oven to 350 degrees F. Butter and line the bottom of 2 (8-inch) cake pans.

In another bowl or wide-necked measuring cup whisk together the eggs, sour cream and vanilla until blended. Add the dry ingredients all at once and mix together on a slow speed. Add the egg mixture, and mix again until everything is blended and then pour into the prepared tins. And actually, you could easily do this manually; I just like my toys and find the stand mixer a comforting presence in itself.
  • Bake the cakes for 45 to 50 minutes, or until a cake-tester comes out clean. Cool the cakes in their pans on a wire rack for 15 minutes, and then turn the cakes out on the rack to cool completely.
  • For the icing:
  • Melt the chocolate in the microwave - 2 to 3 minutes on medium should do it - or in a bowl sitting over a pan of simmering water, and let cool slightly.
  • In another bowl beat the butter until it's soft and creamy (again, I use the stand mixer here) and then add the sifted confectioners' sugar and beat again until everything's light and fluffy. I know sifting is a pain, the 1 job in the kitchen I really hate, but you have to do it or the icing will be unsoothingly lumpy. Then gently add the vanilla and chocolate and mix together until everything is glossy and smooth.
  • Sandwich the middle of the cake with about a quarter of the icing, and then ice the top and sides, too, spreading and smoothing with a rubber spatula.

1 package Duncan Hines® Moist Deluxe® Fudge Marble Cake Mix
1 (3.4 ounce) package vanilla instant pudding and pie filling mix
4 large eggs
1 cup water
⅓ cup vegetable oil

Steps:

  • Preheat oven to 350 degrees F. Grease and flour two 9 x 5 x 3 inch loaf pans.
  • Set aside cocoa packet from mix. Combine cake mix, pudding mix, eggs, water and oil in large bowl. Beat at medium speed with electric mixer for 2 minutes. Measure 1 cup batter. Place in small bowl; stir in contents of reserved cocoa packet.
  • Spoon half the yellow batter in each loaf pan. Spoon half the chocolate batter on top of yellow batter in each pan. Run knife through batters to marble.
  • Bake at 350 degrees F for 45 to 50 minutes or until toothpick inserted in center comes out clean. Cool in pans 5 minutes. Carefully loosen cakes from pans. Invert onto cooling racks. Cool completely. Cut cakes into slices.

3/4 cup packed brown sugar
1-1/4 cups hot water
Ice cream or whipped cream

Steps:

  • In a large bowl, combine flour, sugar, 1/4 cup cocoa, baking powder and salt. Blend in milk, oil and vanilla. Stir in nuts. Pour into a greased square baking pan. Combine brown sugar and remaining cocoa; sprinkle evenly over batter. Pour hot water over top. Do not stir. , Bake at 350° for 45 minutes or until cake tests done. Cool 10 minutes. Cut into squares and invert onto plates. Serve with ice cream or whipped cream. If cake is not served immediately, pieces can also be warmed in the microwave.
