Tips:

  • Use aged egg whites: Aging egg whites helps to strengthen the meringue and gives the macaroons a chewier texture. You can age egg whites by placing them in a covered container in the refrigerator for at least 24 hours, or up to 5 days.
  • Beat the egg whites until stiff peaks form: This will help to create a stable meringue that will hold its shape when baked. When you lift the beaters out of the egg whites, the peaks should stand straight up.
  • Fold in the dry ingredients gently: Overmixing the batter can cause the macaroons to be tough. Use a spatula to gently fold the dry ingredients into the meringue until just combined.
  • Let the macaroons rest before baking: This will help to prevent them from spreading too much in the oven. Let the macaroons rest at room temperature for 30 minutes to 1 hour before baking.
  • Bake the macaroons at a low temperature: This will help to prevent them from browning too much. Bake the macaroons at 300°F (150°C) for 15 to 20 minutes, or until they are set and the tops are matte.

Conclusion:

Fudge macaroons are a delicious and elegant treat that are perfect for any occasion. They are easy to make and can be customized with your favorite flavors. With a little practice, you can create perfect fudge macaroons that will impress your friends and family.
