One of Nigella's cakes that she makes for birthdays. I have adapted it a bit for muffins. It can make about 24 regular sized muffins and 48 mini muffins. It seems complicated but its worth it!

Tips:

  • Use high-quality chocolate chips. This will make a big difference in the flavor of your muffins.
  • Don't overmix the batter. Overmixing will make the muffins tough.
  • Fill the muffin cups only about 2/3 full. This will prevent them from overflowing in the oven.
  • Bake the muffins until a toothpick inserted into the center comes out clean. Don't overbake them, or they will be dry.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack. This will help them to hold their shape.

Conclusion:

These fudgy chocolate chip muffins are the perfect treat for any occasion. They're easy to make and always a hit with everyone who tries them. So next time you're looking for a delicious and indulgent snack, give these muffins a try!
