1 lb. ground turkey (original recipe was for beef)
1 onion, chopped (or used minced onions and onion powder)
1 can cream of celery soup (or use cream of mushroom if your hubby doesn't hate it).
1 can corn, drained
Small brick of Velveeta, cut into cubes (or grated part-skim cheese of choice)
1 Bag Frozen Tater Tots
Use cut up ham or turkey ham instead of ground turkey.
Use other veggie of choice (frozen ok too)

Steps:

  • 1. Preheat oven to 350 degrees. 2. Brown turkey and onion together then drain. 3. Spread ,meat mixture in bottom of a casserole dish. 4. Layer soup, corn, Velveeta, and tater tots. 5. Bake for 45 minutes to an hour, until tater tots are golden brown.

2 lbs yukon gold potatoes (peeled)
1/2 cup butter or 1/2 cup margarine
1/2 pint light sour cream
4 ounces light cream cheese
1/3 cup romano cheese or 1/3 cup parmesan cheese
1/3 cup light grated cheddar cheese
chopped fresh chives
chopped fresh flat-leaf parsley
salt and pepper

Steps:

  • Cut potatoes into cubes.
  • Boil in salted water for 15 min.
  • or until tender.
  • Mash manually with butter and cream cheese.
  • Mix in other ingredients and blend with hand mixer until desired texture is reached.
  • Add milk if you like a smoother texture.
  • Place in coated casserole and bake at 350 degrees for half hour or until heated through and brown on top.
  • Top with chopped parsley.

1 (29 ounce) can tomato sauce
3 ½ pounds chopped cabbage
1 cup uncooked white rice
1 teaspoon salt
2 (14 ounce) cans beef broth

  • In a large skillet, brown beef in oil over medium high heat until redness is gone. Drain off fat.

15 inch wooden stake
1 (12 pound) whole turkey, neck and giblets removed
new 15 gallon metal garbage can with lid

Steps:

  • Lay about 3 long sheets of heavy duty aluminum foil out on the grass to make a square about 3x3 feet. Pound the wooden stake into the ground in the center of the aluminum foil.
  • Fill the lid of the garbage can with a large pile of charcoal, and light. Place the whole turkey (thawed of course) onto the stake, legs down. Turn the garbage can upside down, and place over the turkey. Place piles of lighted coals on the top, and around the sides of the can.
  • Cook for at least 1 1/2 hours, or keep going until coals go out. Do not lift can during cooking. Brush the charcoal off of the can, and lift off carefully as some heat may rush out when you lift the can. The internal temperature of the turkey should be at least 180 degrees F (83 degrees C) when taken in the thickest part of the thigh.
