ROASTED SALMON WITH LEMON-GARLIC HERB BUTTER
As I watched Food Network's Ina Garten make Salmon Nicoise, I was inspired to use the technique of smoothing a thick marinade over salmon filets before roasting. Her marinade is olive oil-based, whereas mine is butter-based and resembles herb butter. My husband was returning from a business trip, so I wanted to surprise him with an elegant dinner. I served this dish alongside lemon-roasted asparagus and roasted garlic smashed potatoes. Needless to say, he was very pleased. Hope you enjoy as well!

Steps:
- Soak your cedar plank in water for 20 minutes, flipping over halfway through soak time.
- While the plank is soaking, mix together butter, basil and minced garlic cloves, spread on salmon.
- Salt and pepper to taste.
- Heat your grill to low, or the right setting for your grill for fish.
- Take your cedar plank out of the water and place the salmon on top of the plank. Place it on the grill and cook for 20-40 minutes depending on how thick your salmon is.Grill with the lid closed.
- During the cooking time, if the plank catches on fire, spray it with water.
- Salmon is done cooking, when it flakes easily with a fork.
- *Note: Whenever I make this it normally takes around 30-45 minutes to cook on the grill. I constantly check it to make sure the plank doesn't burn & the salmon doesn't over cook.
- Make sure you have water on hand to spray the cedar plank with, so it doesn't catch on fire.

Add garlic and saute until lightly golden brown, about 1 - 2 minutes. Pour in chicken broth and lemon juice. Let sauce simmer until it has reduced by half (to about 3 Tbsp), about 3 minutes. Stir in butter and honey and whisk until combined. Set sauce aside. Dab both sides of salmon dry with paper towels, season both sides with salt and pepper. GARLIC BUTTER AND DILL BAKED SALMON
Steps:
- Start by chopping the dill, I LOVE dill and can use it in almost everything so use according to your taste. Also, a little fresh rosemary tastes good with the dill, or basil. Pre-heat oven to 350 Combine butter, 1/2 garlic, and a few pinches of salt and microwave until melted; I also add a little dill to the mix. Slice Lemon into ~8 circular slices (about 5mm thick) Line pan with Foil and use nonstick spray. Place a few slices of lemon on the foil; I used 4 and my fillet was half of a long fillet, totaled about 8-9". Spoon a few spoonfuls of the butter-mix on top of lemon, try to minimize run-off. Sprinkle a small pinch of salt on top of that. On the bottom of the fillet sprinkle some more fresh dill and then lay the fillet over the lemon slices; I added a small amount of chopped rosemary to the underside as well. To the top of the salmon, spoon more butter trying to coat the fillet entirely (may need more butter). Use the rest of the garlic and rub on top of the fillet, also sprinkle a little more salt over it; I like garlic and probably used >tbsp here. Grind pepper over the fillet, use however much you like. Use remaining dill over the top of the fillet, evenly. Add more lemon slices, the lemon flavor may be strong if you use too much, i used 2 and saved the remainder for decoration and lemon juice on the plates. Use any remaining butter here and spoon it over the filet and lemons. Bake at 350 for ~23-24min dep. on thickness. Can save some butter for serving/dipping if you like.
SALMON WITH ANCHOVY-GARLIC BUTTER
Minced anchovies and garlic add a complex salinity to seared salmon, enriching and deepening its flavor. To get the most out of them, the anchovies and garlic are mashed into softened butter, which is used in two ways: as a cooking medium and as a sauce. Used to cook the salmon, the butter browns and the anchovies and garlic caramelize, turning sweet. When stirred into the pan sauce, the raw garlic and anchovies give an intense bite that's mitigated by the creaminess of the butter. It's a quickly made, weeknight-friendly dish that's far more nuanced than the usual seared salmon - but no harder to prepare.

- 5.0 from 10 reviews HONEY GARLIC BUTTER SALMON IN FOIL SAVE PRINT Honey Garlic Butter Salmon In Foil in under 20 minutes, then broiled (or grilled) for that extra golden, crispy and caramelised finish! So simple and only 4 main ingredients, with minimal clean up! Author: Karina - Cafe Delites Serves: 8 INGREDIENTS ¼ cup butter ⅓ cup honey 4 large cloves garlic, crushed 2 tablespoons fresh lemon juice (juice of ½ a lemon) 1.2kg | 2½ pound side of salmon Sea salt, to taste Cracked pepper, to taste (optional) Lemon slices (to serve) 2 tablespoons fresh chopped parsley Report this ad INSTRUCTIONS Position a rack in the middle of the oven. Preheat oven to 375°F | 190°C. Line a baking tray / sheet with a large piece of foil, big enough to fold over and seal to create a packet (or 2 long pieces of foil over lapping each other lengthways to create your salmon packet, depending on the width of you fillet). In a small saucepan, melt the butter over low-medium heat. Add the honey, garlic and lemon, and whisk until the honey has melted through the butter and the mixture is well combined. Place the salmon onto lined baking tray | sheet. Pour the butter/honey mixture over the salmon, and using a pastry brush or spoon, spread evenly over the salmon. Sprinkle with a good amount of salt (about 2 teaspoons) and cracked pepper. Fold the sides of the foil over the salmon to cover and completely seal the packet closed so the butter does not leak. Bake until cooked through (about 15-18 minutes, depending on the thickness of your fish and your preference of doneness). Open the foil, being careful of any escaping steam, and grill / broil under the grill / broiler for 2-3 minutes on medium heat to caramelise the top. Garnish with parsley and serve immediately with lemon slices.
Tips:
- Choose the right salmon: Look for wild-caught, skin-on salmon fillets that are about 1 inch thick.
- Use fresh garlic and herbs: Fresh garlic and herbs will give your salmon the best flavor. If you don't have fresh herbs, you can use dried herbs, but use half the amount.
- Don't overcook the salmon: Salmon is a delicate fish, so it's important not to overcook it. Cook it until it's just cooked through, or until it flakes easily with a fork.
- Let the salmon rest before serving: Let the salmon rest for a few minutes before serving so that the juices can redistribute throughout the fish.
Conclusion:
Garlic butter salmon is a delicious and easy-to-make dish that's perfect for any occasion. It's a great way to enjoy the health benefits of salmon, and it's sure to be a hit with your family and friends. So next time you're looking for a quick and easy weeknight meal, give garlic butter salmon a try. You won't be disappointed!
