1 cup fresh garlic, coarsely chopped
6 tablespoons butter, divided
2 cups flour
2 teaspoons baking powder
1 teaspoon salt
2 tablespoons parsley, finely chopped
1 teaspoon dill
1 cup milk
1/2 cup sharp cheddar cheese

Steps:

  • Preheat oven to 450 degrees F.
  • Gently saute the garlic in 2 tablespoons butter for about 10 minutes until tender but not brown.
  • Sift flour, baking powder and salt into a mixing bowl.
  • Cut in 4 T butter until mixture is crumbly like cornmeal.
  • Add parsley, dill, and milk, stir just until evenly moist.
  • Pour into well-greased 8 x 8-inch pan.
  • Spread garlic on top, then cover with cheese.
  • Bake for 25 to 30 minutes.
  • Cool slightly and cut into fingers.
  • For a variation, combine 1 cup of thinly sliced onions in with the garlic before you saute them.

4 skinless, boneless chicken breast halves
Salt and freshly ground pepper to taste
1 tablespoon chopped fresh oregano or 2 teaspoons dried
2 tablespoons flour
2 tablespoons butter
2 tablespoons olive oil
4 ripe plum tomatoes, skinned, seeded and diced small
1 tablespoon chopped garlic
4 tablespoons chopped fresh coriander or basil
2 tablespoons fresh lime juice

Steps:

  • Using a sharp knife, cut the breast halves in half crosswise, then lengthwise into strips 1/2-inch wide.
  • Blend salt, pepper, oregano and the flour well in a flat dish. Add the chicken pieces in one layer. Stir to season, keeping each strip separate.
  • Heat the butter and oil over high heat in a skillet large enough to hold the chicken pieces in one layer. Add the chicken, cook and stir until lightly browned, about 3 minutes. Add the tomatoes and garlic and cook, stirring, for 3 minutes more. Add the coriander and lime juice and continue cooking. Blend well and serve immediately.

4 French rolls (12 inch)
1/2 lb butter
6 -8 garlic cloves, minced
1/2 cup parmesan cheese, grated
1/4 cup louisiana cajun seasoning

Steps:

  • Melt butter in a saucepan over low heat.
  • Stir in the minced garlic.
  • Pre-heat the oven to 400 degrees F.
  • Cut the French bread in half lengthwise then cut it cross ways in 1" inch strips.
  • Dip the bread strips into the butter/garlic mixture soaking all sides.
  • Place on a cookie sheet.
  • With a basting brush, brush the rest of the butter/garlic onto bread.
  • Sprinkle with the Parmesan cheese.
  • Put in the oven and bake for 15 minutes.
  • Remove.
  • Sprinkle with Cajun seasoning and serve.

1 lb red snapper filets
2 clove garlic, minced
juice of 1/2 lime
1/4 c olive oil
1 egg
2 Tbsp water
1/2 c cracker meal
1/2 c flour
dash nutmeg (optional)
salt and pepper, if desired

Steps:

  • 1. Cut fish filets into thing strips. Mix together the garlic, lime juice, nutmeg and 1/2 tsp. of olive oil. Allow fish to marinate for at least 2 hours.
  • 2. Beat the egg and water in a shallow bowl. Dip the filets in the beaten egg mixture and then coat with the flour. Did fish in the egg mixture again and coat with the cracker crumbs - make sure they are covered well.
  • 3. Heat the oil in a saute pan and saute the fish quickly. Don't over-crowd the pan and turn down the heat if oil gets too hot - being careful not to burn the fish as the fish strips will cook very quickly.
  • 4. Garnish the fish fingers with parsley and serve with lime slices and if preferred, tartar sauce.
