This is quite close to the Philadelphia whipped garlic and herb cream cheese, but I like it better (and I can make it at 3am when I want some instead of having to run to the store).

Number Of Ingredients 8

4 oz fresh goat cheese chevre, room temperature
15 oz whole milk ricotta cheese
1 1/2 tsp kosher salt
1/2 tsp ground white pepper
1 tsp dried garlic powder
1 1/2 tsp dried onion powder
1/2 tsp minced fresh thyme leaves
1 Tbsp finely minced baby chives

Steps:

  • 1. Place ricotta and goat cheese in the bowl of a stand mixer and whip until completely combined, light and fluffy. About 1 minute.
  • 2. Turn mixer on low and add salt, pepper, garlic, onion, thyme and baby chives. Scrape down sides when needed to mix thoroughly.
  • 3. Place in serving bowl or individual ramekins, chill for at least 30 minutes & garnish with a bit of minced baby chives or chopped flat leaf parsley. Enjoy!

Tips:

  • To soften the cream cheese quickly, cut it into small cubes and microwave it for 10-15 seconds at a time, stirring in between, until softened.
  • If you don't have fresh herbs on hand, you can use 1/2 teaspoon of dried herbs for each fresh herb called for in the recipe.
  • For a more flavorful spread, use a combination of hard and soft cheeses, such as cheddar and cream cheese.
  • If you're serving the spread immediately, you can spread it on crackers, bread, or vegetables. If you're making it ahead of time, store it in an airtight container in the refrigerator for up to 3 days.
  • You can also use the spread as a dip for vegetables, pretzels, or chips.
