1 tablespoon olive oil
2 garlic cloves, minced
1/2 teaspoon salt

Steps:

1 1/2 Pound Patty Pan Squash ((can substitute with any summer squash))
2 Cloves Garlic
1/4 Cup Water ((or Fat Free Chicken Broth))
12 Ounces Cherry Tomatoes
2 Ounces Goat Cheese
2 Tablespoons Olive Oil
1 teaspoons Sea Salt
1/2 teaspoon Black Pepper
2 Tablespoons Fresh Oregano

Steps:

  • Preheat Oven to 350
  • Wash the squash, cut off top stem. Cut the Patty pan into bite size pieces.
  • Thinly slice the garlic
  • Add Patty pan squash to a casserole dish. Toss the squash with the olive oil. Add 1/4 cup of water or fat free chicken broth.
  • Toss the garlic, fresh oregano, salt and pepper on the squash
  • Put the tomatoes on top of the squash
  • Bake for 45 minutes. Cook for an additional 15 minutes if squash is not soft. This is done when you can easily press a fork into the patty pan.
  • Sprinkle the top with goat cheese and serve.

The freshness of the ingredients scream "summer".

1 tablespoon olive oil
1 tablespoon butter
½ sweet yellow onion (such as Vidalia®), thinly sliced
4 patty pan squash, sliced to 1/2-inch-thick pieces
3 cloves garlic, crushed, or more to taste
1 dash lemon pepper
1 ½ cups packed fresh spinach
¼ cup chopped fresh parsley
1 tablespoon chopped fresh basil
½ lemon, juiced
