GARLIC POTATO SOUP (ANOTHER ONE)

Garlic Potato Soup (Another One) image

From America's Test Kitchen and I quote them "A garnish is essential to add crunch and flavor to this soup. We like garlic chips, but crisp bacon bits, fried leeks, or garlic croutons are good options, too. A potato masher can be used instead of an immersion blender to mash some of the potatoes right in the pot, though the consistency will not be as creamy. If leeks are not available, substitute an equal amount of yellow onion. The test kitchen prefers the soup made with chicken broth, but vegetable broth can be substituted.

Time 2h45m

Yield 6 serving(s)

Number Of Ingredients 16

3 tablespoons unsalted butter
1 medium leek, white and light green parts halved lengthwise, washed, and chopped small (about 1 cup)
3 garlic cloves, medium, minced (or pressed through a garlic press or about 1 tablespoon)
2 heads garlic, rinsed, papery skins removed and top third of heads cut off and discarded
6 -7 cups low sodium chicken broth (start with 6 cups and use extra cup to thin soup, if needed)
2 bay leaves
table salt
1 1/2 lbs russet potatoes, peeled and cut into 1/2-inch cubes (about 4 1/2 cups)
1 lb Red Bliss potatoes, cut into 1/2-inch cubes (unpeeled)
1/2 cup heavy cream
1 1/2 teaspoons minced fresh thyme leaves
ground black pepper
1/4 cup minced fresh chives
3 tablespoons olive oil
6 medium garlic cloves, sliced thin lengthwise
table salt

Steps:

  • Melt butter in Dutch oven over medium heat. When foaming subsides, add leeks and cook until soft (do not brown), 5 to 8 minutes. Stir in minced garlic and cook until fragrant, about 1 minute.
  • Add garlic heads, broth, bay leaves, and 3/4 teaspoon salt; partially cover pot and bring to simmer over medium-high heat. Reduce heat and simmer until garlic is very tender when pierced with tip of knife, 30 to 40 minutes.
  • Add potatoes and continue to simmer, partially covered, until potatoes are tender, 15 to 20 minutes.
  • Discard bay leaves. Remove garlic heads; using tongs or paper towels, squeeze garlic heads at root end until cloves slip out of their skins. Using fork, mash garlic to smooth paste in bowl.
  • Stir cream, thyme, and half of mashed garlic into soup; heat soup until hot, about 2 minutes. Taste soup; add remaining garlic paste if desired.
  • Using immersion blender, process soup until creamy, with some potato chunks remaining.
  • Alternatively, transfer 1 1/2 cups potatoes and 1 cup broth to blender or food processor and process until smooth. (Process more potatoes for thicker consistency.)
  • Return puree to pot and stir to combine, adjusting consistency with more broth if necessary. Season with salt and pepper and serve, sprinkling each portion with chives and garlic chips.
  • For Garlic Chips.
  • Heat oil and garlic in 10-inch skillet over medium-high heat. Cook, turning frequently, until light golden brown, about 3 minutes. Using slotted spoon, transfer garlic to plate lined with paper towels; discard oil. Sprinkle lightly with salt.

GARLIC SOUP WITH POTATOES AND BROCCOLI

Garlic Soup with Potatoes and Broccoli image

Garlic soup is a dish that you can turn to when you think the cupboards are bare. It makes a soothing, satisfying meal. The classic Provençal version of this soup is made with little more than water, whole crushed garlic cloves, salt, and olive oil; this version is more substantial and has a bit more flavor because I mince the garlic.

Provided by Martha Rose Shulman

Time 30m

Yield Serves 4

Number Of Ingredients 9

7 cups water, chicken stock, or vegetable stock
4 plump garlic cloves, minced or put through a press
A bouquet garni made with a bay leaf and a few sprigs each parsley and thyme, tied together
Salt and freshly ground pepper to taste
3/4 pound Yukon gold or white rose potatoes, peeled if desired and cut in 1/2-inch dice
1/2 pound broccoli florets, broken up into small flowers
2 eggs, beaten
2 tablespoons chopped flat-leaf parsley
2 to 3 tablespoons freshly grated Parmesan

Steps:

  • Bring the water or stock to a simmer in a large saucepan or soup pot. Add the minced garlic, the bouquet garni, salt and pepper, and the potatoes, cover and simmer for 15 minutes, until the potatoes are tender and the broth fragrant.
  • Add the broccoli and simmer uncovered for another 5 to 8 minutes, until the broccoli is tender.
  • Taste the soup and adjust seasonings, making sure that you have added enough salt (the flavors should be vivid). Beat the eggs in a bowl. Remove a ladleful of the soup and whisk it into the eggs to temper them. Turn the heat off under the soup, and stir in the egg mixture. The eggs should cloud the soup but they shouldn't scramble. Stir in the parsley and serve, topping each bowl with grated Parmesan.

Tips:

  • Use high-quality ingredients for the best flavor. Choose fresh, flavorful garlic, and use a good quality olive oil.
  • Don't overcrowd the pot when cooking the potatoes. If you do, they will steam instead of roast and won't get as crispy.
  • Roast the potatoes until they are golden brown and crispy. This will give them a delicious flavor and texture.
  • Use a good quality broth for the soup. A homemade broth is always best, but you can also use a store-bought broth if you're short on time.
  • Add the garlic towards the end of cooking. This will prevent it from burning and becoming bitter.
  • Season the soup to taste with salt and pepper. You may also want to add other seasonings, such as thyme, rosemary, or oregano.
  • Serve the soup hot, garnished with fresh parsley or chives.

Conclusion:

This garlic potato soup is a simple but delicious dish that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste preferences. So next time you're looking for a comforting and flavorful soup, give this recipe a try.
