When your recipe calls for breadcrumbs this is the perfect solution. It also makes a great filler for salmon loaf as well as breading for chicen and fish. This recipe is in my all time favorite cookbook Make-A-Mix Cookery.

2 cups fine dry breadcrumbs (4 slices bread)
1/3 cup instant minced onion
1 tablespoon parsley flakes
1 tablespoon seasoning salt
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon italian seasoning

Steps:

  • Combine all ingredients in a bowl until blended.
  • Place mix in a 1-quart container with tight fighting lid.
  • Label and store in a cool, dry place.
  • Use within 6 months.
  • Please note: In order to"dry" the bread, I cut it into 1 inch cubes, place it in the oven at 325 degrees until toasted.

85g butter , room temperature
2 garlic cloves , finely chopped
175g jarlsberg cheese , coarsley grated
2 tbsp chopped parsley
¼ tsp crushed dried chillies
1 round French country loaf, or ciabatta

Steps:

  • Preheat the oven to fan 170C/conventional 190C/ gas 5. Beat the butter and garlic, then mix in the cheese, parsley and chillies. Cut the bread in half crossways through the centre.
  • Spread the cheese mixture on the cut sides of both bread halves. Wrap each half loosely in foil and put on a baking sheet. Bake for 20 minutes, unwrap the foil and bake a further 10-15 minutes until starting to turn pale golden. Cut into wedges and serve.

¼ cup grated Parmesan cheese
2 cloves garlic, minced
¼ teaspoon dried marjoram

¼ teaspoon fines herbs

¼ teaspoon dried parsley, or to taste
1 loaf unsliced Italian bread

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a bowl, mix together the butter, Parmesan cheese, garlic, marjoram, basil, fines herbs mix, oregano, black pepper, and parsley until thoroughly combined. Split the Italian bread loaf in half lengthwise, and spread each half generously with the butter mixture.

1 pound stale bread, sliced
1/4 cup extra-virgin olive oil
2 cloves garlic, smashed with a knife

Steps:

  • Preheat the oven to 350°F.
  • Place the bread slices on a baking sheet and bake until lightly toasted and dry, 10 to 12 minutes. While the bread toasts, place the olive oil and garlic in a sauté pan and set over low heat. Cook gently, allowing the garlic to infuse the oil.

1/2 small loaf day-old Italian bread (about 1/2 pound), cut into large pieces
3 tablespoons freshly grated Parmigiano-Reggiano cheese
1/4 cup finely chopped fresh flat-leaf parsley
Pinch of freshly chopped oregano
1 clove garlic, finely chopped
3 tablespoons olive oil
Coarse salt and freshly ground black pepper

Steps:

  • Place bread in the bowl of a food processor; process until fine crumbs are formed. Transfer crumbs to a large bowl along with cheese, parsley, oregano, and garlic; stir to combine.
