Number Of Ingredients 20

Nonstick cooking spray
2 eggs
2 pounds ground pork
1/2 cup panko breadcrumbs
1/4 cup finely chopped green onion
1 teaspoon salt
1/2 teaspoon ground white pepper
1-1/2 cups low sodium chicken broth, divided
2 tablespoons cornstarch
1 tablespoon olive oil
2 tablespoons minced garlic
4 teaspoons minced ginger
6 dried Arbol chiles
1/2 cup hoisin sauce
1/4 cup rice wine vinegar
3 tablespoons light brown sugar
2 tablespoons honey
1 teaspoon sesame oil
Green onions
Sesame seeds (optional)

Steps:

  • Make the Meatballs: Preheat oven to 350 degrees F. Spray rimmed baking pan with cooking spray. Place eggs in large bowl and beat. Add pork, breadcrumbs, onion, salt and pepper. Stir (or mix with hands) until just combined. Do not overmix. Using hands, gently form into golf-ball sized meatballs and place on prepared pan.
  • Transfer to oven and bake 18 to 20 minutes or until internal temperature of meatballs reaches 160 degrees F.
  • Meanwhile, make the General Tso's Sauce: In small bowl, whisk together 1/2 cup broth and cornstarch; set aside. Heat olive oil in small pot over medium heat. Add garlic and ginger and cook 1 minute, stirring constantly. Add chiles, hoisin, vinegar, sugar, honey, sesame oil and remaining 1 cup broth. Heat to boiling over medium-high heat. Whisk in broth-cornstarch mixture. Cook 2 to 3 minutes or until sauce has thickened, whisking constantly. Remove from heat.
  • Place meatballs in large bowl. Pour General Tso's Sauce over meatballs and toss until meatballs are coated in sauce. Transfer meatballs to serving dish and serve garnished with green onions and sesame seeds.

Time 45m

Number Of Ingredients 18

1 1/4 pound ground chicken (or turkey)
5 cloves garlic, minced
1/2 teaspoon dried ginger
1/2 teaspoon Chinese five spice powder
1 tablespoons EACH: low sodium soy sauce, sesame oil AND sesame seeds
1 egg
3/4 cup panko breadcrumbs
3/4 teaspoon salt + 1/2 teaspoon pepp
2 tablespoons oil
4 scallions, thinly sliced (separate the whites and the greens)
8 dried Thai chilies
5 cloves garlic, minced
1/2 cup EACH: low sodium soy sauce AND chicken broth
1/3 cup EACH: brown sugar AND rice vinegar
1/2 teaspoon dried ginger
2 tablespoons EACH: hoisin sauce AND tomato paste
2 cups steamed broccoli florets (see notes)
1 tablespoon cornstarch dissolved in 2 tablespoon water

Steps:

  • MEATBALLS: In a medium bowl, using a fork, mix together all the ingredients except the ground chicken. Then add the ground chicken and mix until *just* combined. Just be sure you don't overwork the meat. Roll into 18-22 meatballs using a cookie scoop (affiliate link) or about 1 1/2 tablespoons each.
  • Heat a large skillet over medium-high heat. Drizzle in a little oil. Add the meatballs to the skillet but do not overcrowd. Cook in batches if they don't all fit. Sear the meatballs for 6-7 minutes, flipping to brown all sides evenly. We'll finish cooking the meatballs through in the sauce later. Remove meatballs to a plate.
  • SAUCE: In a large measuring cup, combine the soy sauce, chicken broth, brown sugar, dried ginger, rice vinegar, hoisin sauce, and tomato paste. Heat 1 tablespoon of oil in the same skillet over medium-high heat. Add the thinly sliced scallions (white portion) and the dried Thai chilies and let sizzle for about a minute before adding the garlic and letting it cook for just 30 seconds. Slowly pour in the prepared sauce and allow the sauce to reach a simmer. Stir in the cornstarch slurry and you'll notice the sauce thickens a little. Add the meatballs into the sauce and let cook for 3-4 minutes on low heat. Stir in the steamed broccoli florets. Top with the remaining scallion greens and serve warm over jasmine rice, quinoa, or egg noodles.

BAKED GENERAL TSO'S CHICKEN

Baked General Tso's Chicken image

General Tso's Chicken is Ree's favorite Chinese takeout dish. Typically prepared by deep frying dark meat chicken pieces before tossing in a sweet and spicy sauce, Ree is changing it up by coating chicken breast pieces in panko and baking them until crispy, skipping the frying. Paired with a simple sauce based on the classic flavors, you will be able to have takeout at home any time.

Time 30m

Yield 4 servings

Number Of Ingredients 18

Nonstick cooking spray, for the rack and chicken
1 cup all-purpose flour
2 tablespoons soy sauce
3 large eggs
2 cups panko breadcrumbs
1 pound boneless, skinless chicken breast, cut into 1- to 2-inch cubes
3/4 cup low-sodium chicken broth
3 tablespoons hoisin sauce
2 tablespoons rice wine vinegar
2 tablespoons soy sauce
2 teaspoons sriracha
2 teaspoons cornstarch
2 teaspoons sesame oil
1 teaspoon grated ginger
Pinch red pepper flakes
2 cloves garlic, finely minced
Cooked white or brown rice, for serving
Sliced scallion greens, for serving

Steps:

  • For the crispy chicken: Preheat the oven to 425 degrees F. Set a rack on a sheet tray and spray with cooking spray.
  • Place the flour in a wide shallow dish. Whisk together the soy sauce and eggs in another wide, shallow dish. Place the panko breadcrumbs in a third wide, shallow dish.
  • Working in batches, dip the chicken pieces first in the flour, then in the egg mixture and then in the breadcrumbs.
  • Place the chicken pieces on the rack, leaving space between each piece. Spray with cooking spray. Bake until crispy and golden brown, about 15 minutes.
  • For the sauce. Meanwhile, whisk together the chicken broth, hoisin, rice wine vinegar, soy sauce, sriracha and cornstarch; set aside.
  • Place a large sauté pan over medium heat and add the sesame oil. Add the ginger, pepper flakes and garlic and cook until fragrant, about 1 minute. Add the rice wine mixture, bring to a simmer and allow to thicken. Add the crispy chicken and toss to coat. Serve immediately with rice and garnish with sliced scallions.

Tips:

  • Use fresh, high-quality ingredients for the best flavor.
  • Make sure the meatballs are cooked all the way through before adding them to the sauce.
  • Use a medium or high heat when cooking the sauce to prevent it from burning.
  • Stir the sauce constantly to prevent it from sticking to the pan.
  • Add a splash of vinegar or lemon juice at the end of cooking to brighten the flavor of the sauce.
  • Serve the meatballs with your favorite sides, such as rice, noodles, or vegetables.

Conclusion:

General Tso's meatballs are a delicious and easy-to-make dish that is perfect for a weeknight meal or a party appetizer. With its sweet, tangy, and slightly spicy sauce, these meatballs are sure to be a hit with everyone who tries them. So next time you're looking for a new and exciting recipe, give General Tso's meatballs a try.
